For the Salad:
- 1 head of Romaine lettuce, chopped or torn
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1/2-1 small red onion, thinly sliced (can soak in cold water to reduce pungency)
- 1 medium cucumber, chopped (English or Persian preferred)
- 1 cup cherry tomatoes sliced in half
- 1 cup black olives pitted (Kalamata recommended)
