Instructions

  • Gently unroll or roll out your pie shell to about 12 inches in diameter. Carefully fit it over the pie dish, pressing it into the bottom and sides without tearing. Fold and crimp the edges of the pie shell all along the perimeter of the dish for a decorative finish and to prevent excessive shrinkage.
  • Fit a sheet of aluminum foil or parchment paper into the pie dish, pressing it gently against the bottom and sides of the pie crust. Aluminum foil is often preferred as it can be lightly folded over the pie crust edges to prevent them from over-browning.
  • Fill the lined crust with an even layer of pie weights or dried beans. This helps to keep the crust from puffing up or shrinking during baking.
  • Bake for approximately 25 minutes. Carefully remove the pie dish from the oven and gently lift out the foil or parchment paper along with the weights.
  • Poke several holes over the bottom and a few on the sides of the crust with a fork. Return to the oven and bake for another 10-15 minutes, or until the crust is golden brown and appears dry. Remove from the oven and allow it to cool completely on a wire rack before adding the filling. This is a critical step to prevent a soggy pie!
