Instructions

In a mixing bowl, combine all ingredients for the bourbon sauce (bourbon, apple juice, apple cider vinegar, soy sauce, chicken broth, ketchup, brown sugar, garlic, ginger, red pepper flakes, and 2.5 tbsp cornstarch). Whisk well until smooth and set aside.

Cut chicken thighs into small, bite-sized pieces, removing as much excess fat as possible.

Place the cut chicken into a large zip-top bag. Add 3 tablespoons of cornstarch, seal the bag (removing air), and shake vigorously until all chicken pieces are evenly coated.

Preheat a large skillet or wok over medium-high heat. Add 3 tablespoons of peanut or vegetable oil. Once shimmering, add the dredged chicken in batches if necessary, and sear on all sides until golden brown and almost cooked through. Remove the chicken from the pan and set it aside.
