Ingredients

Chicken Meatballs:

  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/2 small yellow onion
  • 3 garlic cloves
  • Salt
  • Fresh cracked black pepper
  • 2 Tbsp chopped chives
  • 2 tbsp vegetable oil for cooking

Teriyaki Sauce:

  • 2 Tbsp rice vinegar
  • 3/4 cup low sodium soy sauce*
  • 1/2 cup low sodium chicken stock
  • 1/3 cup honey
  • 6 garlic cloves
  • 1 tsp grated ginger

Instructions

  • Combine all ingredients for chicken meatballs in a mixing bowl and mix well, until all evenly combined.
  • Preheat a medium cooking pan over medium heat.
  • Roll meatballs that are about 1-inch in diameter. Add vegetable oil to the pan and add meatballs. Cook meatballs, covered, for about 7 minutes and turn them over. Continue cooking the meatballs uncovered until almost done but not completely cooked through.
  • Whisk all ingredients for teriyaki sauce in a bowl and add the sauce to the pan with meatballs.
  • Cook until the meatballs are fully done and the sauce has thickened.
  • Take out meatballs and set aside.
  • Simmer the remaining sauce in the pan until it is reduced to your desired thickness.
  • Return meatballs to the pan and mix thoroughly with the reduced teriyaki sauce to coat evenly. Serve hot.

*Soy Sauce Notes: To lower the saltiness, always use low sodium soy sauce. If using regular soy sauce (not low sodium), we recommend using 1/2 cup regular soy sauce and 1/2 cup low sodium chicken stock (often labeled “no salt added”) to achieve a balanced flavor. Regular soy sauce is significantly saltier than its low sodium counterpart.

You can also increase the amount of honey to 1/2 cup if you prefer a sweeter sauce.

If you find the low-sodium soy sauce is still too salty for your taste, you can always dilute it further with a couple more tablespoons of unsalted chicken broth.
