For the Peach Puree:

  • Carefully peel the skin off the ripe peaches before blending. For very ripe peaches, the skin should come off easily by hand; otherwise, use a vegetable peeler for convenience.
  • Once peeled and pitted, place the peach flesh into a blender. Add the optional honey if you desire extra sweetness. Blend until the mixture is completely smooth and free of any lumps.
  • If you’re not using the peach puree immediately, pour it into an airtight food storage container and refrigerate. For optimal freshness and flavor, we recommend using the fresh peach puree within 1 day of preparation.

Assembling Your Bellinis:

  • Chill your champagne flutes if possible. Divide the peach puree evenly among the prepared flutes, adding approximately 1 1/2 oz (about 3 tablespoons) of puree per flute.
  • Holding each flute at a 45° angle, slowly pour chilled Prosecco into the glass, filling it about halfway. Gently stir the puree and Prosecco with a spoon to combine. Then, continue to fill the flute with Prosecco the rest of the way, maintaining the angle to minimize foam.

How long to store fresh peach puree?

You can easily save yourself some time by making peach puree the day before or a few hours before. I don’t recommend preparing peach puree any earlier than 1 day because fresh peach puree won’t last much longer in the fridge while maintaining optimal flavor and color.

How To Pour Prosecco for a perfect Bellini? 

First – it’s best to use all cold ingredients. So make sure your peach puree and your prosecco are well chilled. If you can remember, chilling the glasses as well will further reduce foam and keep your drink colder longer.

Second – pour on an angle! Pouring straight down will create excessive foam. Pick up the glass and hold it tilted at about a 45° angle. Hold the champagne/prosecco bottle close to the glass and slowly and gently pour the sparkling wine down the inside side of the glass. This technique minimizes agitation and helps preserve the bubbles and a smooth pour.
