Ingredients

Salmon Patties:

  • 1/2 cup diced yellow onion
  • 1/2 cup diced sun-dried tomatoes
  • 1 tbsp oil (to cook onions and tomatoes)
  • 10 oz canned salmon (no bones or skin), mostly drained
  • 1 1/2 cups cooked jasmine rice, lightly packed
  • 1 egg
  • 1/4 cup bread crumbs
  • 3 tbs mayo
  • 1 tbsp Worcestershire sauce
  • salt, to taste
  • fresh cracked black pepper, to taste
  • 1/2 cup Panko bread crumbs for coating (can use regular bread crumbs)
  • 2 tbsp oil for cooking

Sauce:

  • 3 tbsp mayo
  • 1 tsp Dijon mustard
  • 2 tsp lemon juice
  • 1 tbsp capers, drained

Instructions

  1. Preheat a pan over medium heat and add 1 tbsp oil. Sauté chopped onions and diced sun-dried tomatoes until they are golden and tender. Once slightly cooled, transfer this mixture to a large mixing bowl.
  2. Carefully drain most of the liquid from the canned salmon and add the flaked salmon to the bowl with the onion and tomato mixture. Add the cooked rice and all remaining ingredients for the salmon patties (except for the 1/2 cup of Panko breadcrumbs designated for coating).
  3. Mix everything thoroughly until all ingredients are well combined and the mixture is cohesive. Ensure there are no dry spots and that the binders are evenly distributed.
  4. Form the salmon mixture into individual patties, about 1/2 to 3/4 inch thick. Lightly coat each patty evenly in the Panko breadcrumbs. Arrange the coated patties on a clean cutting board or a sheet of parchment paper while you finish preparing them all.
  5. Preheat a large cooking pan or skillet over medium heat and add 2 tbsp of oil for frying. Allow the oil to heat thoroughly before adding the patties.
