  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 2 Tbsp olive oil (for sauce)
  • 1 small yellow onion, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 3-4 garlic cloves, minced
  • 1 Tbsp minced fresh parsley
  • 4-5 fresh basil leaves, minced
  • 14.5 oz can crushed tomatoes
  • 1 tsp dry oregano
  • 1 tsp dry thyme
  • 1/2 tsp red pepper flakes
  • *Optional: 2-3 canned hot pepperoncini peppers, chopped
  • 1 (16 oz) package of linguine

Instructions

  1. Preheat a large cooking pan over medium-high heat.
  2. Season steak generously with salt and pepper on both sides.
  3. Add 1-2 Tbsp olive oil to the hot pan and sear the steak for about 2 minutes on each side until a nice crust forms. Remove steak onto a plate and set aside. (As steak juices accumulate while resting, pour them into the sauce later.) Lower the heat in the pan to medium.
  4. While preparing the sauce, cook the linguine according to package directions. Drain and set aside.
  5. Add the remaining 2 Tbsp olive oil to the pan (if needed) and add the thinly sliced onions and bell peppers. Cook until the vegetables are softened, about 5-7 minutes.
