Ingredients

Pizza Dough:

  • 1 cup warm water (about 120°)
  • 1/4 oz pack of active dry yeast
  • 1 tsp white granulated sugar
  • 1 tsp honey
  • 2 Tbsp olive oil
  • 2 ½ to 3 cups all-purpose flour
  • 1 tsp salt

Topping:

  • 4 Garlic cloves (minced)
  • 4 Tbsp Fresh minced Italian Parsley
  • 4 Tbsp Fresh minced basil
  • 2 Tbsp Extra virgin olive oil
  • 1/2 cup Fresh grated Parmesan cheese
  • Salt (to taste)

Instructions

The Dough:

  1. Place the active dry yeast in a large mixing bowl and mix it with 1 tsp of sugar. Add warm water, stir well, and let it bloom for about 5 minutes until foamy.
  2. Add 2 cups of flour, salt, honey, and olive oil to the yeast mixture. Mix the dough with a wooden spoon at first, then use your hands until all ingredients are combined. Gradually add the remaining 1/2 cup of flour, kneading the dough until it comes together. If the dough remains too sticky, add a little more flour, one tablespoon at a time, until it’s manageable.
  3. Lightly flour a clean counter surface and transfer your dough onto it. Knead the dough for approximately 2-3 minutes until it becomes smooth and elastic.
  4. Lightly grease a clean bowl with olive oil and place the dough in it, turning once to coat. Cover the bowl tightly with plastic wrap and let it rise in a warm, draft-free place until it has doubled in size, which usually takes about 1 to 1 1/2 hours. After the first rise, gently punch down the dough to release the air, then let it rise again for another 30-45 minutes.
  5. Once the second rise is complete, remove the dough from the bowl and knead it gently for about a minute until it is smooth again.
  6. At this stage, if you’re not using all the dough immediately, you can place half of it in a large ziplock bag that has been lightly greased with olive oil. This dough can be refrigerated for up to 3 days, making it perfect for meal prepping.
  7. If you are making breadsticks, separate the dough in half after kneading and refrigerate the unused half. You can use the other half to make a pizza later or prepare more breadsticks. For a large party or holiday dinner, you can use the entire batch of dough to make breadsticks, simply remember to double the topping amount for ample flavor.

For The Breadsticks:

  1. Preheat your oven to 425°F (220°C). Lightly grease a large cookie sheet or baking pan. If you’re using a pizza stone, spread some cornmeal over the stone and place it in the oven to preheat thoroughly.
  2. Divide the remaining dough into two or three smaller, more manageable pieces to make rolling easier.
  3. On a lightly floured surface, roll out each piece of dough into approximately 5×10-inch rectangles, about ¼ inch thick. Aim for an even thickness to ensure uniform baking.
  4. In a small bowl, combine the minced garlic, fresh minced Italian parsley, fresh minced basil, extra virgin olive oil, and a pinch of salt. Mix these ingredients thoroughly to create your aromatic topping.
  5. Generously spread the herb-garlic mixture evenly over the surface of each rolled-out dough rectangle, ensuring full coverage. Then, sprinkle the fresh grated Parmesan cheese over the top.
  6. Using a pizza cutter or a sharp knife, carefully slice the dough into 1-inch thick strips, cutting width-wise across the rectangle.
