  • 3 tbsp unsalted butter
  • 2 tbsp dark brown sugar
  • 1/4 cup caramel
  • 24 oz cream cheese (3 packs)
  • 2/3 cup juice from cooking the apples
  • 2 tbsp sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp corn starch
  • 1/2 cup white granulated sugar
  • For Topping
  • 3 Granny Smith Apples
  • 3 tbsp caramel
  • 3-4 cups boiling hot water
  • 1 tbsp sugar

Instructions

  1. ~ Grease a 9-inch springform pan and set aside. Preheat the oven to 325°F (160°C).
  2. For the Crust: Finely crush the graham crackers (a food processor works wonders for this). In a bowl, combine the crushed graham crackers, dark brown sugar, melted butter, and vanilla extract. Stir thoroughly until all ingredients are well mixed. Press this mixture firmly and evenly into the bottom of the prepared springform pan, extending about halfway up the sides.
