Ingredients

  • 2.75 – 3 lbs rump roast
  • 1 large yellow onion
  • 8 oz baby portobello mushrooms
  • 1 lb garlic bulb
  • 1 tsp crushed red pepper flakes more or less depending on your spicy tolerance
  • 1/2 Tbsp dry oregano
  • 1 Tbsp dry thyme
  • 2 Tbsp dry parsley
  • 2 Tbsp dry basil
  • 1/2 Tbsp white granulated sugar
  • 1 tbsp coarse or sea salt more or less to taste
  • 1 tbsp freshly ground black pepper
  • Beef stock enough to just cover the beef about 4-5 cups

Instructions

  • Heat up the beef stock and stir in the dry Italian herbs (oregano, thyme, parsley, basil), salt, crushed red pepper flakes, and sugar until well combined.
  • Carefully place the rump roast into your slow cooker. Using a small knife, poke several holes all over the roast, approximately 1.5 inches deep. Peel individual garlic cloves and insert them into these holes, distributing them evenly.
  • Slice the yellow onion and baby portobello mushrooms into reasonably thick pieces – avoid slicing them too thin. Add these sliced onions and mushrooms into the slow cooker around and on top of the beef.
  • Pour the prepared stock mixture over the beef and vegetables in the slow cooker, ensuring the beef is mostly submerged (add more stock if necessary to just cover the beef).
