Beyond Valentine’s Day: The Art of Everyday Love

With Valentine’s Day often approaching, it’s a time when many feel compelled to express love and appreciation. However, the sentiment behind such a holiday often sparks a debate: should love be confined to just one day of the year? While some might view it as a commercialized obligation, others embrace the opportunity to create special moments. We often hear the question, “Why do I have to show my love more on this one day than any other?” And frankly, we couldn’t agree more with the spirit of that question!

Our philosophy is simple: every day is an opportunity to show affection. Imagine breakfast in bed, accompanied by roses, chocolates, or even a heartfelt poem – not just on a single designated holiday, but frequently throughout the year. One day simply isn’t enough to convey the depth of your feelings for a significant other, a family member, or a dear friend. True love and appreciation should be woven into the fabric of daily life, perhaps not every single day for grand gestures, but certainly more often than just once a year. Consistency in kindness and thoughtful acts creates a stronger, more enduring bond.

So, to all those who argue against the “hassle” of Valentine’s Day by insisting they don’t need a special holiday to demonstrate their love, we wholeheartedly agree and say: “Fantastic! Then do it every day!” Don’t wait for a specific date on the calendar to surprise your loved one with this delightful Cherry Cheesecake French Toast in bed. Instead, make this weekend special, and then perhaps the next, and the one after that. Let every Saturday or Sunday be an unofficial celebration of your affection.

Ingredients

Filling:

  • 4 oz cream cheese
  • 1 Tbsp sugar
  • 1 tsp vanilla extract
  • 2 Tbsp heavy whipping cream

French Toast:

  • 8 oz French baguette (6 1 1/2-inch thick slices)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 Tbsp sugar
  • 2 Tbsp whole milk

Topping:

  • 15 oz can of whole dark cherries in syrup (set aside about a tbsp of syrup)
  • 1 tsp cinnamon
  • 1/4 cup brandy
  • 1 Tbsp corn starch

Instructions

  • Combine cream cheese, 1 tablespoon of sugar, heavy whipping cream, and 1 teaspoon of vanilla extract in a bowl. Beat until the mixture is smooth and creamy, then set aside.
  • In a separate wide bowl, whisk together eggs, whole milk, vanilla extract, and sugar until thoroughly combined and smooth. This will be your French toast batter. Set aside.
  • Preheat a large frying pan or griddle over medium heat. Add a small amount of oil or butter to coat the cooking surface, ensuring even cooking for the French toast.
  • Slice the French baguette into pieces approximately 1 1/2-inches thick. Carefully make a horizontal cut into the middle of each slice, creating a pocket. Do not cut all the way through, leaving one side intact.
  • Gently spread a generous amount of the prepared cream cheese mixture inside the pocket of each baguette slice. Ensure the filling is evenly distributed.
  • Dip each stuffed baguette slice into the egg mixture, allowing both sides to absorb the batter well. Place the coated slices into the preheated cooking pan.
  • Cook each side until golden-brown and the egg is fully cooked through. This usually takes a few minutes per side, depending on your pan and heat level.
  • While the French Toast is cooking, prepare the cherry topping. Heat a small sauce pot over medium heat.
  • Once the sauce pot is warm, add the brandy. Allow it to simmer for a couple of minutes to cook off some of the alcohol, enhancing the flavor.
  • Add the whole dark cherries (drained, but remember to save about a tablespoon of the syrup for later), and cinnamon to the pot. Stir gently to combine the flavors.
  • In a separate small bowl, mix the reserved tablespoon of cherry syrup with the corn starch until a smooth slurry forms. Quickly stir this slurry into the simmering cherry mixture in the pot. Continue stirring slowly until the sauce heats through and thickens to your desired consistency. Cook for a few more minutes, stirring frequently, to ensure the corn starch is fully cooked and the sauce is glossy.
  • Once the French toast is cooked and the cherry sauce is ready, divide the stuffed French toast among two plates. Generously spoon the warm brandy dark cherries and their exquisite sauce over each serving. Serve immediately and enjoy!

Notes

Note: If whole dark cherries in syrup are difficult to find, a good substitute is cherry pie filling. Should you use pie filling, remember to omit the corn starch from the recipe when preparing the topping, as pie filling is already thickened.

Tips for Perfection:

  • Choose Your Bread Wisely: A day-old French baguette is ideal. Its slightly stale texture prevents it from becoming soggy when dipped in the egg mixture, ensuring a perfect crisp exterior and tender interior.
  • Don’t Overstuff: While it’s tempting to load up on the cream cheese, overstuffing can make the French toast difficult to cook evenly and prone to oozing. A moderate amount ensures the filling remains deliciously contained.
  • Even Cooking: Medium heat is key. Too high, and the exterior will burn before the egg is cooked through and the filling is warm. Too low, and it will absorb too much oil and become greasy.
  • Brandy Alternative: If you prefer to avoid alcohol, you can substitute the brandy in the cherry sauce with a tablespoon of cherry juice, apple juice, or even a splash of orange juice for a different flavor profile.
  • Serve Immediately: Stuffed French toast is best enjoyed fresh off the pan when it’s warm, crispy, and the filling is gooey.
