- 14-16 oz blueberries
- 1 medium shallot, diced
- 1 Tbsp oil for cooking (vegetable or olive oil)
- 1/3 cup balsamic vinegar
- 2 Tbsp brown sugar
- 1 tsp culinary lavender
- Salt, to taste
- Fresh cracked black pepper, to taste
- 1 cup olive oil
Instructions
- Preheat a small pan over medium heat and add 1 tablespoon of cooking oil.
- Add the diced shallot to the pan and sauté until it becomes translucent and softened, about 3-5 minutes.
- Stir in the fresh blueberries and cook for approximately 5 minutes, stirring frequently. As they cook, gently press on the blueberries with the back of a spoon or spatula to help them break down and release their juices.
- Slightly increase the heat, then pour in the balsamic vinegar and add the brown sugar. Mix all ingredients thoroughly. Allow the mixture to simmer, stirring often, until the liquid has reduced by about half and thickened slightly, which should take around 7-10 minutes.
- Remove the pan from the heat and stir in the culinary lavender. Cook for just about one minute, allowing its delicate aroma to infuse into the blueberry mixture.
