Ingredients

  • 1.5 lb stew beef
  • 7 cups water
  • 1 large bay leaf
  • 1 tsp ground thyme
  • Salt and fresh ground black pepper

  • 1 medium yellow onion diced
  • 2 green bell peppers seeds taken out and diced
  • 6 oz baby bella mushrooms sliced thin
  • 1 Tbsp all purpose flour
  • 2 garlic cloves pressed
  • 1/4 cup heavy whipping cream
  • 1 cup shredded Monterrey Jack cheese

Instructions

  1. Cut stew beef into small, bite-sized cubes.
  2. In a large pot, over medium heat, add a little olive oil and brown the stew beef on all sides. Once the meat is nicely seared, add water. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low. Incorporate the bay leaf and ground thyme, cover the pot (leaving a slight crack for steam to escape), and let it simmer for approximately one and a half hours, stirring occasionally, until the beef is wonderfully tender.
  3. Carefully remove the bay leaf from the pot and discard it.
  4. In a separate sauté pan, heat the remaining olive oil over medium heat. Add the diced onions, sliced mushrooms, and diced bell peppers. Season with a pinch of salt and pepper and sauté until the vegetables begin to soften and turn a golden hue.
