Ingredients

  • 28 oz frozen tater tots
  • 2 tsp white truffle oil (high-quality recommended)
  • 1/4 cup freshly grated Parmesan cheese (plus more for garnish)

For the Garlic Herb Aioli:

  • 1 cup mayonnaise (good quality)
  • 2 garlic cloves, pressed or finely minced
  • 1 tsp Dijon mustard
  • 1 Tbsp minced fresh chives
  • 1 Tbsp minced fresh parsley (flat-leaf)
  • 1/2 Tbsp minced fresh dill weed
  • 1 tsp minced fresh thyme
  • 1 Tbsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp coarse kosher salt (or to taste)
  • 1/4 tsp black pepper (freshly ground, or to taste)

Instructions

To Prepare the Garlic Herb Aioli:

  1. In a medium-sized bowl, combine mayonnaise, pressed garlic, Dijon mustard, all minced fresh herbs (chives, parsley, dill, thyme), lemon juice, Worcestershire sauce, garlic powder, kosher salt, and black pepper.
  2. Whisk all ingredients together thoroughly until completely smooth and evenly combined. Taste and adjust seasoning if necessary.
  3. For best flavor development, cover and refrigerate the aioli for at least 30 minutes before serving. It can be made up to 2 days in advance.

To Cook and Finish the Truffle Tater Tots:

  1. Cook the frozen tater tots according to your preferred method (air fryer or oven) until they are golden brown and exceptionally crispy. Refer to the “Perfecting the Crisp: Cooking Methods for Tater Tots” section above or your tater tot package instructions for specific times and temperatures. Ensure not to overcrowd the cooking vessel for maximum crispiness.
  2. Immediately transfer the hot, crispy tater tots to a large mixing bowl. While they are still steaming hot, sprinkle with the freshly grated Parmesan cheese and drizzle generously with the white truffle oil.
  3. Gently toss the tater tots until every piece is evenly coated with the melted Parmesan and infused with the truffle oil. Be careful not to break the tots during tossing.
  4. Transfer the finished truffle tater tots onto a serving platter or into a large serving bowl. If desired, sprinkle with a little extra fresh Parmesan cheese and a dash of fresh chives or parsley for garnish.
  5. Serve immediately with the prepared Garlic Herb Aioli on the side for dipping. Enjoy the gourmet experience!
