  • 1 can sweetened condensed milk
  • 3 cups milk chocolate chips dark or semi-sweet can be substituted if preferred
  • 7 oz marshmallow fluff
  • 1 cup chopped lightly salted toasted almonds I use Blue Diamond brand
  • Truffles:
  • 10-12 oz chocolate melting chips
  • 2 tbsp coarse sea salt

Instructions

  1. For the Fudge:
  2. Line a 9×9 inch baking dish with parchment paper, ensuring the paper extends up the sides to create “handles.” Grease the parchment paper thoroughly with butter or a non-stick baking spray to prevent sticking.
  3. In a large mixing bowl, combine the chocolate chips, chopped almonds, and marshmallow fluff. Set this bowl aside.
  4. In a heavy-bottomed saucepan, melt the butter over medium heat. Add the sweetened condensed milk and bring the mixture to a gentle simmer, stirring constantly to prevent it from burning.
  5. Carefully pour the hot condensed milk mixture into the bowl with the chocolate chips, almonds, and marshmallow fluff. Whisk slowly at first to avoid splattering, then increase your speed until the mixture is completely smooth and all ingredients are well combined. If using a metal bowl, an oven mitt can help you hold it securely. Should the whisking become too difficult, switch to a sturdy rubber spatula.
  6. Pour the fudge mixture into your prepared baking dish and spread it evenly to create a flat surface. Allow it to cool to room temperature on the counter before transferring the pan to the refrigerator. Chill for at least a couple of hours, or preferably overnight, until firm.
  7. Once thoroughly chilled and firm, lift the fudge out of the pan using the parchment paper handles. Using a cookie scoop (such as a #50 or desired size), scoop out portions of the chocolate fudge and roll them into uniform balls. Place these fudge balls onto a large cutting board lined with fresh parchment paper. You may need more than one board depending on the yield.
  8. Prepare a small bowl of coarse sea salt and keep it close to your working area. This will allow you to sprinkle salt onto the truffles immediately after dipping them in chocolate.
  9. Melt the chocolate melting chips according to the package instructions. For best results, use a double boiler to ensure even, gentle melting without scorching.

Gently shake off any excess chocolate by tapping the fork against the side of the double boiler.
