Ingredients
For the Pretzel Dough:
- ¼ oz packet dry active yeast (about 2 ¼ tsp)
- 2 tsp sugar
- 1 cup warm water (105-115°F / 40-46°C)
- 1 tsp salt
- 3 cups all-purpose flour (plus more for dusting surface)
- 2 Tbsp unsalted butter, cold and chopped
For Boiling and Topping:
- 3 Tbsp baking soda (for the boiling water)
- About ¼ cup poppy seeds
- Coarse salt, to taste
- 8 slices black olives (for spider eyes, 2 slices per pretzel spider)
Instructions
- In a medium bowl, combine the dry active yeast and sugar. Pour in the warm water and whisk gently until the sugar dissolves completely. Let this mixture sit for about 10 minutes until the yeast becomes foamy and activated. This indicates your yeast is ready to work its magic!
- In the bowl of an electric mixer (fitted with a dough hook if you have one), combine the all-purpose flour and salt. Add the cold, chopped unsalted butter to the flour mixture. Mix on low speed until the butter is fully incorporated and the mixture resembles coarse crumbs.

Take the slightly larger piece of dough, roll it into an oval shape, and then gently twist one end of the oval once to create a distinct head and body for your spider.
