Ingredients

  • Lime juice, from half a lime
  • 6 soft tacos
  • 6 crunchy tacos
  • 1 1/2 cup shredded Mexican cheese mix

Instructions

  1. Preheat a large cooking pan over medium heat.
  2. Add oil and diced onion, jalapenos, and tomatillos to the pan. Cook the vegetables, stirring occasionally, until they soften and become fragrant, about 5-7 minutes.
  3. Add the ground turkey to the pan with the cooked vegetables. Break up the turkey with a spoon. Season generously with salt, cumin, and chili powder. Cover the pan and cook for a few minutes, then stir, continuing to break up any large clumps. Cook until the turkey is completely browned and cooked through, about 10-12 minutes. Remove from heat.
  4. For the Cheesy Double Taco Shells (Optional): In a separate non-stick pan, melt a small amount of shredded Mexican cheese mix onto one soft taco shell over low heat. Once the cheese is fully melted and slightly bubbly, carefully remove the soft taco from the pan and immediately place a crunchy taco shell in the middle of the melted cheese. Gently press the edges of the soft taco around the crunchy shell to “glue” them together. Repeat this process for all tacos. If skipping, simply warm your hard taco shells.
