  • 1 large egg, room temperature
  • 2 Tbsp. whole milk
  • 1 1/2 cups sweetened coconut flakes (for rolling the cookies)

  2. Combine Sugar & Cream Cheese: In a spacious mixing bowl, combine the granulated sugar and the room-temperature cream cheese.
  3. Add Butter: Pour the warm, melted unsalted butter over the sugar and cream cheese mixture. Whisk vigorously until the ingredients are thoroughly combined and the mixture is smooth.
  4. Incorporate Wet Ingredients: Add the room-temperature large egg and whole milk to the bowl. Continue to whisk until the mixture is perfectly smooth and all components are well-integrated.
  5. Mix Dry Ingredients: Gradually add the dry ingredients to the wet mixture: unbleached all-purpose flour, salt, baking soda, baking powder, and the instant coconut cream pudding mix.
