- 1 egg
- ½ cup low fat buttermilk
- 2 Tbsp butter melted
- 1/3 cup blueberry syrup from above
- 1 tsp vanilla extract
- 3/4 cup blueberries
Glaze:
- 1/3 cup whiskey
- 1/4 cup blueberry syrup from above
- 2 cups powdered sugar
- 1 1/2 tsp heavy whipping cream
Instructions

For the Blueberry Syrup:

Combine blueberries in a small saucepan and heat over medium flame.

Stir in lemon juice, vanilla extract, and granulated sugar until well combined.

Cover the pot, leaving a small crack for steam to escape, and simmer for approximately 15 minutes, stirring frequently. Keep a close watch to prevent it from boiling over.

Once cooked, use an immersion blender or transfer to a stand blender to puree the blueberry mixture until smooth.
