Ingredients

For the Brownies:

  • 12 oz unsalted butter
  • 2 oz dark chocolate chips
  • 1 1/4 cups brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice extract
  • 1/2 cup buttermilk
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 Tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

For the Frosting:

  • 1/2 cup unsalted butter (room temperature)
  • 8 oz cream cheese (softened)
  • 1/3 cup pumpkin puree
  • 3 cups powdered sugar
  • 1/2 Tbsp pumpkin pie spice

Instructions

For the Brownies:

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×13 inch baking dish, ensuring no spots are missed.
  2. In a small saucepan, over medium heat, melt the unsalted butter. Once melted, add the dark chocolate chips, vanilla extract, and brown sugar. Continue stirring with a silicone-covered whisk until the mixture is fully melted and smooth. Remove the saucepan from the heat.
  3. Carefully transfer the warm chocolate mixture into a large mixing bowl. Whisk slowly for a couple of minutes to allow it to cool slightly.
  4. Gradually whisk in the buttermilk until it is fully combined and the mixture is uniform.
  5. Add the eggs one at a time, whisking well after each addition until the mixture is smooth and fully incorporated.
  6. Finally, whisk in the pumpkin puree until the batter is smooth and a beautiful consistent color.
  7. In a separate bowl, sift together the all-purpose flour, cocoa powder, pumpkin pie spice, baking powder, baking soda, and salt. Gradually add the sifted dry ingredients to the wet mixture, whisking until just combined and smooth. Be careful not to overmix.
  8. Pour the brownie batter into the prepared 9×13 inch baking dish, spreading it evenly with a spatula. Gently tap the dish on the counter a couple of times to release any air bubbles and ensure an even spread. Bake for 40-42 minutes.
    *Baker’s Tip: For an extra gooey brownie texture, reduce the baking time by about 5 minutes.

For the Frosting:

  1. Before you begin making the frosting, ensure your brownies are completely cooled. Applying frosting to warm brownies will cause it to melt and slide off.
  2. In the bowl of an electric mixer fitted with a paddle attachment, beat the room temperature butter on medium-high speed for approximately one minute, until it becomes light and fluffy. Add the softened cream cheese and continue to beat on medium-high speed for 1-2 minutes, until the mixture is smooth and free of lumps.
  3. Stop the mixer and scrape down the bottom and sides of the bowl to ensure all ingredients are well-incorporated. Add the pumpkin puree and beat for another couple of minutes until smooth.
  4. Reduce the mixer speed to low. Gradually add the powdered sugar and pumpkin pie spice, mixing until just combined.
  5. Increase the speed back to medium-high and beat for 3-4 minutes, or until the frosting is light, perfectly smooth, and wonderfully fluffy.
  6. For best results, refrigerate the frosting for 15-20 minutes before spreading it over the cooled brownies. This helps it firm up slightly, making it easier to spread smoothly.
  7. Generously spread the chilled frosting evenly over the completely cooled brownies.
  8. Due to the cream cheese in the frosting, these brownies should be stored in the refrigerator to maintain freshness and prevent spoilage.
