  • 3 lbs Russet (Idaho) potatoes
  • 1 oz garlic cloves (about 4-6 medium cloves), pressed
  • 2.5 cups chicken or vegetable broth (enough to just cover potatoes)
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 3 tbsp unsalted butter
  • 1/4 cup leftover broth from cooking potatoes
  • 1/4 cup whole milk (more or less if needed)

Instructions

  1. Peel and quarter potatoes. (If you prefer to leave skin on for a rustic touch, ensure potatoes are thoroughly washed and scrubbed, as potato skin contains many nutrients.)
  2. Place the quartered potatoes into the Instant Pot’s inner pot.
  3. Add the pressed garlic cloves to the potatoes. Season generously with salt and pepper.
  4. Pour in enough broth to just cover the potatoes.
  5. Close the Instant Pot lid and make sure it is latched. Turn the valve to the “Sealing” position. Set the Instant Pot to cook on high pressure cook mode for 15 minutes.
