Homemade Pumpkin Syrup Recipe

This recipe yields about 3 cups of delicious, spiced pumpkin syrup, perfect for sharing or keeping all to yourself throughout the fall season. It’s incredibly easy to make with just a few pantry staples and comes together in about 10 minutes!

Ingredients

  • 1 cup brown sugar
  • 1 cup white granulated sugar
  • 1/2 tsp cinnamon (or more, to taste, for a bolder spice profile)
  • 3/4 cup water
  • 1/2 cup light corn syrup (helps with consistency and shine)
  • 1 tsp vanilla extract
  • 5 Tbsp pumpkin puree (ensure it’s pure pumpkin, not pie filling)
  • *Optional: A pinch of nutmeg, ginger, or cloves for extra pumpkin spice flavor

Instructions

  1. In a small saucepan, combine the brown sugar, white granulated sugar, cinnamon, water, and light corn syrup.
  2. Place the saucepan over medium-high heat. Using a heat-resistant whisk (silicone-covered is ideal to prevent scratching), stir all the ingredients continuously until the sugars are fully dissolved and the mixture comes to a rolling boil.
  3. As soon as the mixture begins to boil, immediately reduce the heat to medium. Continue to stir slowly to prevent sticking and ensure even cooking.
  4. Let the syrup simmer for 2-3 minutes, maintaining a gentle boil and stirring occasionally. This short simmering time is enough to thicken the syrup slightly without making it too thick or caramelizing the sugars too much.
  5. Remove the saucepan from the heat. Stir in the vanilla extract and pumpkin puree until thoroughly combined and smooth.
  6. Allow the syrup to cool completely to room temperature. As it cools, it will thicken further.
  7. Once cool, transfer the homemade pumpkin syrup into a clean, airtight jar or bottle.
  8. Store the pumpkin syrup in the refrigerator. It will keep well for up to 2-3 weeks, though it’s so delicious, it likely won’t last that long!
