Remove the corn from the water and let it cool completely until it’s comfortable to handle.
  2. For easier cutting, carefully slice a small portion off the bottom of each cob to create a flat, stable base. Place the prepared cob vertically inside a wide, rimmed baking dish or a deep bowl. This will help contain the kernels as you cut them.
  3. Using a sharp knife, carefully slice the kernels off the cob from top to bottom, following the natural curve of the cob. Work your way around until all the kernels have been removed. Transfer the cut kernels into a large mixing bowl.
  4. Finely dice the red onion, bell pepper, and jalapeño pepper. Add all the diced vegetables to the bowl with the corn kernels. Mince or press the garlic cloves and add them to the bowl as well.
