Ingredients

  • 2 boneless skinless chicken breasts
  • 4-6 oz sliced Mozzarella cheese depending on how cheesy you want it
  • 1 1/2 cups Marinara sauce
  • 4-5 leaves fresh basil
  • 2/3 cup Italian bread crumbs
  • 1/4 cup dry Parmesan cheese
  • 1 egg
  • 1/2 cup shredded Parmesan cheese
  • fresh ground black pepper to taste
  • salt to taste

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a small casserole baking dish. (If doubling the recipe, ensure you use a larger baking dish to accommodate more roll-ups).
  • Carefully slice each chicken breast in half width-wise, similar to butterflying but cutting all the way through to create two thinner pieces from each breast. Cover your cutting board with plastic wrap, place the chicken halves on it, and then cover them with another sheet of plastic wrap. Using a meat mallet, pound the chicken halves gently but firmly until they are about 1/4 to 1/2 inch thick, being careful not to tear the meat. Season both sides of the pounded chicken with salt and fresh ground black pepper to taste.
  • In a shallow dish, mix the Italian bread crumbs with the dry Parmesan cheese and a pinch of salt. Set this breading mixture aside. In a separate bowl, combine the marinara sauce with the minced fresh basil and set aside.
  • Spread approximately 1-2 tablespoons of the basil-infused marinara sauce evenly over one side of each pounded chicken cutlet.
  • Slice the mozzarella cheese into thin pieces. Divide the mozzarella slices among the chicken halves, placing about 2-3 slices on top of the marinara sauce on each breast, depending on your desired cheesiness.
  • Carefully roll up each chicken cutlet tightly, encasing the mozzarella and marinara. Prepare for breading by dipping each rolled chicken piece first into the bread crumb mixture, ensuring it’s fully coated. Then, dip it into the whisked egg, letting any excess drip off. Finally, roll it in the bread crumb mixture again for a second, thorough coating. This double breading ensures a crispy exterior.
  • Pour the remaining marinara sauce over the bottom of your prepared baking dish. Carefully place the breaded chicken roll-ups into the dish, ensuring the seam of each roll-up is facing down to prevent unraveling during baking.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breading is golden. After this initial baking, sprinkle the shredded Parmesan cheese evenly over the top of the chicken roll-ups.
