The holiday season often brings a whirlwind of activity, and this year has been no exception. Between the joyful chaos of holiday shopping, the warmth of festive baking, attending lively school parties, and maintaining a demanding work schedule, life has felt like a delightful blur. Despite the non-stop pace, it’s a wonderful kind of crazy, as Christmas is undeniably my favorite time of the year. I find immense pleasure in the art of gift-giving, more so than receiving. The sheer joy on loved ones’ faces as they unwrap presents is a truly heartwarming experience – it’s a moment I cherish. Our school Christmas parties are also highlights, filled with children running around in their pajamas, fueled by brownies and hot cocoa, creating memories I wouldn’t trade for anything.

This particular week has been especially packed, marking the final stretch of school before the Christmas break. My little one and I have a calendar full of exciting activities planned to make the most of the festive atmosphere around town. The highlight we’re most looking forward to is the “Nights of Lights Train.” It’s not just a train ride through the city adorned with dazzling Christmas lights; it also includes stops for warm hot cocoa and a decadent chocolate fountain! Rumor has it there might even be some festive movie screenings. The anticipation is building!

Amidst all this holiday excitement and the constant flurry of festive treats, I realized it was time to take a brief hiatus from baking and focus on preparing a wholesome, savory dinner. As much as we adore cookies, a balanced diet requires something more substantial, especially during such busy times. I’ve been leaning towards easy and effortless dishes that deliver big on flavor without requiring extensive time or effort. This Asiago Spinach Mushroom Chicken Rollatini fits the bill perfectly. It’s incredibly simple to make, utilizes readily available ingredients, and combines them into a truly memorable flavor profile that satisfies the whole family.

Ingredients

  • 2 large chicken breasts
  • 8 oz frozen spinach thawed and squeezed dry
  • 5 oz baby bella mushrooms diced
  • 3 garlic cloves minced or grated
  • 3/4 cup grated Asiago cheese for the filling
  • Salt and fresh cracked pepper to taste
  • 1 cup Panko bread crumbs
  • 1/4 cup grated Asiago cheese for the coating
  • Salt and fresh cracked pepper for the coating mixture

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a small casserole or baking dish to prevent sticking. This ensures your chicken rollatini cooks evenly and releases easily.
  2. In a medium skillet, heat a touch of olive oil over medium heat. Add the thawed and thoroughly squeezed spinach, diced baby bella mushrooms, and minced garlic. Season with a pinch of salt and pepper. Sauté until the mushrooms are tender and most of the moisture has evaporated, about 5-7 minutes. Transfer the mixture to a bowl and let it cool slightly. Once cool enough to handle, stir in 3/4 cup of Asiago cheese. This forms the flavorful core of your spinach and mushroom chicken rollatini.
  3. Prepare the chicken breasts: Slice each large chicken breast horizontally into two thinner cutlets, as if butterflying but cutting all the way through. Place one chicken cutlet inside a thick, heavy-duty zip-top bag (or between two sheets of plastic wrap). Using a meat mallet, carefully pound the chicken to an even 1/4-inch thickness. Be gentle but firm to avoid tearing the meat. Repeat with the remaining chicken breasts. Season both sides of the pounded chicken with salt and fresh cracked pepper. This thinness allows for easy rolling and quick cooking.
  4. In a separate shallow dish, combine the Panko bread crumbs with the remaining 1/4 cup of grated Asiago cheese, a dash of salt, and fresh cracked pepper. This mixture will give your rollatini a wonderfully crispy exterior.
  5. Divide the cooled spinach and mushroom filling evenly among the pounded chicken breasts, spreading it from edge to edge. Don’t overfill, as you need to be able to roll them tightly.
  6. Starting from one end, tightly roll up each chicken breast with the filling enclosed. Once rolled, press each chicken rollatini firmly into the Panko-Asiago mixture, ensuring all sides are thoroughly coated. This breading step is crucial for that desirable crunch.
  7. Carefully place the breaded chicken rollatini into your prepared casserole dish, making sure the seam side is facing down. This helps the rolls maintain their shape during baking.
  8. Bake for 35-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C), and the Panko crust is golden brown and crispy.

When cooking chicken rollatini, ensuring the chicken breasts are uniformly thin is key. This not only aids in even cooking but also makes the rolling process much easier and ensures a beautiful presentation. Don’t be shy with the seasoning; a generous hand with salt and pepper on both the chicken and the filling enhances every bite. The Panko breadcrumbs provide a lighter, crisper coating than traditional breadcrumbs, making for a superior texture. For a richer flavor, consider browning the rollatini lightly in a skillet before baking to lock in moisture and develop a deeper crust. This easy chicken dinner is guaranteed to become a family favorite.
