- Lay each chicken breast flat on a cutting board. Carefully, using a sharp knife, slice a pocket into the thickest part of the chicken breast, starting from the larger end. Ensure not to cut all the way through to the bottom or sides, aiming to create a deep internal pocket. Repeat this process for all three breasts.
