The Secret to Perfect Bread Pudding: Stale Bread
Using stale bread is not just a suggestion; it’s a crucial step for achieving the ideal bread pudding texture. Fresh bread is too soft and will absorb the custard mixture unevenly, resulting in a soggy pudding. Stale bread, on the other hand, is drier and firmer, allowing it to soak up the custard beautifully and hold its shape during baking, leading to a perfectly tender and moist interior with a delightful chew.
How to Stale Bread Effectively
There are a couple of methods to stale your bread:
- Air-Drying Method (Recommended):
Approximately 24 hours before you plan to make your bread pudding, cut a 16 oz French baguette into 1/2-inch cubes. Spread these cubes in a single, even layer on a large rimmed baking sheet. Leave the bread out at room temperature, uncovered, for about 24 hours. This allows the bread to dry out naturally, becoming perfectly stale for your pudding.
- Quick Oven Method:
If you’re short on time, preheat your oven to 200°F (93°C). Cut your bread into 1/2-inch cubes and spread them on a large rimmed baking sheet in a single layer. Place the baking sheet(s) into the preheated oven and let the bread harden for about 1.5 to 2 hours, or until it feels dry and firm to the touch but not toasted or browned. Keep a close eye on it to prevent burning.
Once your bread is stale, you’re ready to proceed with creating this incredible dessert!

How to Make Apple Pie Bread Pudding: A Step-by-Step Guide
Crafting this sensational Apple Pie Bread Pudding involves two main components: the flavorful apple pie filling and the rich bread pudding custard. Each step is straightforward, ensuring a delightful baking experience.
1. Preparing the Homemade Apple Pie Filling:
- Apple Preparation: Begin by peeling, coring, and dicing your chosen apples into small, uniform cubes. Gala apples are excellent for their balanced sweetness and texture, but other varieties like Honeycrisp or Fuji also work wonderfully.
- Flavor Blend: In a mixing bowl, gently toss the diced apples with all-purpose flour, brown sugar, and apple pie spice. The flour helps to thicken the juices released by the apples, creating that classic pie filling consistency, while the brown sugar and spice infuse deep, warm flavors.
- Cooking the Apples: In a medium saucepan, melt butter over medium heat. Add the apple mixture and stir well to coat. Pour in the water, mix again, and bring the mixture to a gentle simmer. Reduce the heat to medium-low, cover with a lid, and cook for 10-15 minutes, stirring frequently, until the apples are tender but still hold their shape.
- Strain and Save Juices: Remove the saucepan from the heat. Carefully strain the cooked apples through a fine-mesh strainer, making sure to save all the flavorful juices! These juices will be used later as a luscious topping for the finished bread pudding, adding an extra layer of moisture and apple essence. Set both the cooked apples and the strained juice aside.

2. Assembling and Baking the Bread Pudding:
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish to prevent sticking.
- Layer the Bread and Apples: Evenly spread the stale bread cubes across the bottom of the prepared baking dish. Then, distribute the cooked apple filling all over the bread. Gently move the mixture around to ensure some apple pieces nestle between the bread cubes, creating pockets of flavor throughout.
- Prepare the Custard: In a large mixing bowl, whisk together the large eggs, whole milk, melted unsalted butter, vanilla extract, the remaining brown sugar, apple pie spice, and ground cinnamon until thoroughly combined and smooth. This rich custard forms the heart of the bread pudding, enveloping the bread with creamy goodness.
- Pour and Soak: Pour the egg mixture evenly over the bread and apples in the casserole dish. Gently press down on the bread cubes with the back of a spoon or spatula. This step is essential to help the bread absorb the custard mixture completely, ensuring a moist and flavorful pudding.
- Baking Process: Place the casserole dish in the preheated oven. Bake for an initial 30 minutes. After this time, loosely cover the top of the bread pudding with a sheet of aluminum foil. This prevents the top from browning too quickly while the interior continues to cook through. Continue baking for an additional 15-20 minutes, or until the bread pudding is set and a knife inserted into the center comes out mostly clean.
- Finish with Juices: Once baked, carefully remove the bread pudding from the oven. Immediately pour the reserved apple juices (from step 1) all over the top. This adds back moisture and an intense apple flavor. Let the bread pudding rest for about 10 minutes before slicing and serving. This resting period allows the juices to fully absorb and the pudding to set further.
- Serve Warm: For the ultimate indulgence, serve your Apple Pie Bread Pudding warm, ideally with a generous scoop of cold vanilla ice cream melting gloriously over the top. The contrast of warm and cold, soft and creamy, is simply irresistible.

How To Tell If Bread Pudding Is Done?
Ensuring your bread pudding is perfectly cooked is key to its deliciousness. There are a couple of reliable ways to check for doneness:
- The Touch Test: Gently touch the middle of the bread pudding. If it’s still very jiggly and feels squishy, it needs more time in the oven. A fully cooked bread pudding will feel firm to the touch and offer a slight resistance when gently pressed.
- Internal Temperature: For the most accurate reading, use an instant-read digital thermometer. Insert it into the center of the bread pudding. You’re aiming for an internal temperature of 170°F-175°F (77°C-79°C). This temperature ensures the eggs in the custard are fully cooked and safe to eat.
What is Apple Pie Spice?
Apple pie spice is a delightful blend of warm, aromatic ground spices specifically formulated to enhance the flavor of apple-based desserts. It typically consists of ground cinnamon, nutmeg, and allspice. This convenient mix saves you the trouble of measuring individual spices and provides a consistent, harmonious flavor profile.
Make Your Own Apple Pie Spice Blend:
If you don’t have apple pie spice on hand or prefer to make your own, it’s incredibly simple:
Combine 2 tablespoons of ground cinnamon with 2 teaspoons of ground nutmeg and 1 teaspoon of ground allspice. Mix all the spices thoroughly until well blended. Store your homemade apple pie spice in a small, airtight glass jar with a lid, keeping it in a cool, dark place to maintain its potency and freshness.

Make-Ahead Suggestions for Convenience
This Apple Pie Bread Pudding is perfect for meal prepping or preparing in advance, whether you want to get a head start on a special occasion or simply streamline your baking process. You can prepare the entire dish ahead of time, or just certain components.
Preparing Apple Pie Filling in Advance:
Follow the recipe instructions to make the apple pie filling. Once cooked, strain the apples and save the juices separately. Allow both the cooked apples and the juice to cool completely. Transfer them into separate airtight food storage containers and refrigerate for up to 3-4 days. When ready to assemble the pudding, simply bring them to room temperature before incorporating.
Assembling and Refrigerating the Bread Pudding:
You can also fully assemble the bread pudding in the baking dish without baking it. After pouring the custard over the bread and apples, cover the dish tightly with plastic wrap or a lid. Refrigerate it overnight or for up to 24 hours. Do not refrigerate for longer than 24 hours, as the bread can become overly saturated and lose its desired texture.
Baking a Make-Ahead Bread Pudding:
The next day, remove the casserole pan from the refrigerator and let it sit on the counter for about 30 minutes to an hour to come closer to room temperature. This helps ensure even baking. While it warms, preheat your oven to 375°F (190°C). Bake the bread pudding according to the recipe instructions, adding the foil cover at the specified time. This method allows for fresh-baked goodness with minimal effort on the day of serving.

Storage and Reheating
Leftover Apple Pie Bread Pudding is just as delicious, if not more so, the next day! Proper storage ensures its wonderful texture and flavor remain intact.
- Storing: You can easily store the bread pudding in the same baking dish it was baked in. Make sure it’s completely cooled, then cover it tightly with plastic wrap or use a baking dish that comes with an airtight lid. Store it in the refrigerator for 3-4 days.
- Freezing: For longer storage, you can freeze individual slices or the entire pudding (if baked in a freezer-safe dish). Once completely cooled, wrap individual slices tightly in plastic wrap, then aluminum foil. For the whole pudding, wrap the dish tightly with several layers of plastic wrap and then foil. It can be frozen for up to 2-3 months. Thaw in the refrigerator overnight before reheating.
- Reheating:
- Microwave: For individual slices, place them on a microwave-safe plate and microwave for 30-60 seconds, or until heated through.
- Oven: For a larger portion or the entire pudding, place it in an oven-safe dish, cover loosely with foil, and reheat in a 300°F (150°C) oven for 15-25 minutes, or until warmed to your liking.
Tips for the Perfect Apple Pie Bread Pudding Every Time
- Choose the Right Bread: While a French baguette is recommended for its sturdy texture, other breads like challah, brioche, or even day-old white sandwich bread can be used. Ensure it’s stale for best results.
- Don’t Overcook Apples: Cook the apples just until tender. They will continue to cook slightly in the oven, and you want them to retain some texture, not turn to mush.
- Press Down the Bread: This step is critical! Make sure all the bread cubes are submerged in the custard mixture to ensure even absorption and a uniformly moist pudding.
- Don’t Skip the Foil: Covering the pudding loosely with foil during the latter part of baking prevents the top from getting too dark or crispy while the center finishes cooking.
- Resting Time: Allow the pudding to rest for 10-15 minutes after baking. This helps the custard set and the juices fully incorporate, making for cleaner slices and a more cohesive texture.
Serving Suggestions and Variations
While a scoop of vanilla ice cream is a classic pairing, don’t hesitate to get creative with your serving choices or adapt the recipe to your taste:
- Ice Cream & Cream: Beyond vanilla, consider cinnamon, caramel swirl, or even butter pecan ice cream. Freshly whipped cream or a dollop of crème fraîche also adds a delightful creamy element.
- Sauces: Drizzle with warm caramel sauce, butterscotch, or a light maple syrup.
- Nuts: Sprinkle toasted pecans or walnuts over the top for added crunch and nutty flavor.
- Spiced Whipped Cream: Whip heavy cream with a touch of brown sugar and a pinch of cinnamon or apple pie spice for an extra layer of flavor.
- Add a Boozy Touch: For adults, a splash of bourbon or rum in the custard mixture can add a sophisticated depth of flavor.
- Cranberry Twist: In the fall, add a handful of dried cranberries to the apple filling for a tart counterpoint.
