The Perfect Bacon Egg Salad for Any Occasion

This week, we’re blessed with a wonderful weather surprise, a welcome shift from the scorching 90-degree days down to a comfortable low 70s, even dipping into the 50s at night. The truly delightful part? This beautiful, mild weather is set to last all the way through the Easter holiday. It’s such a relief to know we won’t be sweltering in the heat while our little one enjoys the classic Easter egg hunt outdoors. I still vividly recall one year when the sun was so intense and the temperatures so high, my son gave up after finding only three eggs. It’s always a little heartbreaking when unfavorable weather puts a damper on our festive plans and family fun.

This year, my Easter celebration will be simple, intimate, and focused on quality family time. We’re planning a cozy day at home, indulging in all the traditional kid-friendly activities. After experiencing numerous large-scale Easter events where children would practically climb over each other in a frantic scramble for eggs, I realized much of the joy and spirit of the day was lost in the chaos. For us, sweet, small, and simple is truly the ideal approach. Inviting a few close friends over for a relaxed egg hunt, some creative egg decorating, and classic games promises to be the most heartwarming and memorable way to spend this special holiday.

A Delicious Solution for Leftover Easter Eggs and Ham

Now, with Easter often comes the delightful, yet sometimes daunting, dilemma: what to do with all those leftover hard-boiled eggs and holiday ham? The most traditional and undeniably best ways to utilize your bounty of Easter eggs are to create creamy egg salad and delectable deviled eggs. Personally, I almost always gravitate towards making egg salad. There’s just something incredibly satisfying about a well-made egg salad sandwich. My absolute favorite rendition involves a warm pita bread, a generous scoop of egg salad, a slice of cheese, and, yes, a few tangy pickles. I know, pickles might sound unconventional to some, but trust me, they add an amazing crunch and zesty counterpoint that perfectly complements the rich egg salad. Don’t knock it until you try it – it’s truly fantastic!

But let’s be honest, bacon has a magical ability to elevate almost anything it touches. While pickles are a great addition, bacon takes this egg salad to an entirely new level. In fact, I’d go so far as to say bacon is simply amazing on *everything*! Imagine combining the rich, creamy texture of classic egg salad with the salty, smoky crunch of bacon, the fresh bite of green onions, a medley of fragrant herbs, all served inside a light, buttery, and flaky croissant. This isn’t just an egg salad sandwich; it’s a culinary experience – a truly fabulous and gourmet way to transform those humble leftover hard-boiled eggs into an extraordinary meal that’s perfect for brunch, lunch, or a sophisticated snack.

Why This Bacon and Green Onion Egg Salad Will Be Your New Favorite

This isn’t just any egg salad; it’s a flavor explosion designed to tantalize your taste buds and make the most of those leftover hard-boiled eggs. The secret lies in the harmonious blend of textures and tastes. The creamy base of finely chopped eggs and mayonnaise provides a comforting foundation, while the star of the show, crispy bacon, introduces an irresistible smoky, savory, and crunchy element that elevates the dish far beyond traditional egg salad. Fresh green onions add a mild, peppery bite and vibrant color, cutting through the richness beautifully. A touch of fresh parsley brings a herbaceous freshness, and a hint of garlic powder rounds out the savory profile, creating a perfectly balanced and incredibly addictive concoction.

What makes this recipe truly special is its versatility. While the recipe highlights serving it on a light and airy croissant – a truly decadent choice that feels like a special treat – don’t limit yourself! It’s equally fantastic served simply on toasted bread for a classic sandwich, piled high on a crisp lettuce wrap for a low-carb option, or even as a delightful scoop alongside fresh vegetables. The combination of ingredients ensures that every bite is packed with flavor, making it a crowd-pleaser for brunches, picnics, or a quick, satisfying lunch. It’s a brilliant way to turn simple ingredients into something extraordinary.

Tips for Making the Perfect Hard-Boiled Eggs

The foundation of any great egg salad is perfectly cooked hard-boiled eggs. While everyone has their preferred method, here’s a technique that consistently yields easy-to-peel eggs with firm yet tender yolks. Start by placing your eggs in a single layer at the bottom of a medium pot. Cover the eggs with about an inch of cold water. Bring the water to a rolling boil over high heat. Once boiling vigorously, immediately turn off the heat, cover the pot with a lid, and let the eggs sit in the hot water for 10-12 minutes for large eggs. For extra-large eggs, allow an additional minute. This gentle cooking method prevents overcooking and those unsightly green rings around the yolk.

Once the resting time is up, immediately transfer the eggs to an ice bath (a bowl of ice water) to stop the cooking process. This sudden temperature change helps the egg whites contract, making them much easier to peel. Let them cool in the ice bath for at least 5-10 minutes before peeling. For peeling, gently tap the egg on a hard surface to crack the shell all around, then roll it between your palms to loosen the shell further. Start peeling from the wider end, where the air pocket is located. You’ll find the shell comes off much more smoothly this way, leaving you with beautiful, unmarred hard-boiled eggs ready for your delicious bacon and green onion egg salad.

Ingredients

  • 6 hard-boiled eggs
  • 1/3 cup diced green onion
  • 4-5 crispy bacon strips
  • 1 Tbsp fresh minced parsley
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 1/3 cup mayo
  • For Serving (Sandwich):
  • Crispy bacon strips (optional, for topping)
  • Egg salad
  • Croissant rolls

Instructions

  1. Hard-boiled eggs: Start by bringing water to a boil in a medium pot, ensuring there’s enough water to completely cover the eggs. Carefully add the eggs using a large spoon to prevent cracking. Once all eggs are in, cover the pot and boil for about 1 minute, then immediately turn off the heat. Leave the pot on the same burner, still covered, and let the eggs sit for approximately 20-25 minutes. This method helps achieve perfectly cooked yolks and easier peeling. Of course, feel free to use your preferred method for making hard-boiled eggs if you have one.
  2. Once cooled, peel the hard-boiled eggs and dice them into small, even pieces. Transfer the diced eggs to a large mixing bowl.
  3. Cook your bacon strips until they are perfectly crispy. Drain them on paper towels, then dice the crispy bacon into small pieces and add them to the mixing bowl with the eggs.
  4. To the bowl, add the diced green onions, fresh minced parsley, garlic powder, and season with salt and fresh cracked black pepper to your taste. Gently mix all the ingredients until they are thoroughly combined and evenly distributed.
  5. Finally, add the mayonnaise to the mixture. Gently fold it in using a spatula or spoon until the mayo is fully incorporated and the egg salad reaches a creamy consistency. Be careful not to overmix, as this can break down the eggs too much.
  6. Serve immediately on buttery croissant rolls, or chill in the refrigerator for flavors to meld further. Enjoy!
