Elevate Your Meal: Customizing Your Stuffed Peppers
One of the best aspects of Chicken Fajita Stuffed Peppers is its versatility. This recipe serves as an excellent foundation, allowing you to easily customize it to suit your preferences, dietary needs, or whatever ingredients you have on hand. Don’t hesitate to get creative and make this dish uniquely yours.
- Protein Power-Up: While chicken is a fantastic choice, you’re not limited! For a richer, beefy flavor, consider using thinly sliced skirt steak or flank steak, marinated and cooked just like the chicken, to create Beef Fajita Stuffed Peppers. If you’re a seafood enthusiast, succulent shrimp makes for a delightful and lighter alternative, adding a fresh oceanic twist. For vegetarian options, consider using firm tofu, tempeh, or a mix of hearty mushrooms as your protein base, ensuring they are well-seasoned to absorb the fajita flavors.
- Vegetable Medley: Bell peppers are just the beginning! Boost the nutritional value and complexity of your filling by incorporating more vegetables. Sweet corn adds a touch of sweetness and texture, while black beans bring a hearty, earthy note and extra protein. Sautéed mushrooms lend a savory depth, and finely chopped broccoli or zucchini can be mixed into the rice for hidden greens. For those who love an extra kick, finely diced chili peppers like jalapeños or serranos can be added to the filling, or even roasted with the bell peppers for a smoky heat.
- Cheese Please! The right cheese can transform the filling from great to absolutely irresistible. To achieve a creamier, more decadent texture in the rice mixture, stir in a couple of ounces of softened cream cheese before stuffing the peppers. For a classic Mexican-inspired finish, sprinkle generously with shredded Monterrey Jack, known for its excellent melting qualities. Mozzarella offers a mild, stretchy melt, while Pepper Jack cheese introduces a subtle spicy warmth that complements the fajita flavors beautifully. Experiment with a blend of cheeses for a multi-layered taste experience.

Ingredients
Marinade:
- 1/3 cup avocado or vegetable oil
- 2 Tbsp lime juice
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground chili pepper
- Salt (to taste)
- 2 garlic cloves, pressed
- 2 chicken breasts
Stuffed Peppers:
- Cooked chicken from above (diced)
- 3 large bell peppers or 4 medium bell peppers
- 1/2 cup chopped yellow onion
- 1 medium tomato, chopped
- 5 oz uncooked Spanish rice*
- 1 tsp. fresh minced cilantro
- 6-8 Tbsp Mexican cheese mix
Instructions
- In a large mixing bowl, combine all ingredients for the Fajita marinade (oil, lime juice, cumin, paprika, chili powder, salt, and pressed garlic). Whisk thoroughly until well combined. Add the chicken breasts to the marinade, ensuring they are fully coated, and let them marinate for about 15 minutes to absorb the flavors.
- While the chicken marinates, preheat an oven-safe skillet on your stovetop over medium heat. This skillet will be used for both cooking the chicken and baking the stuffed peppers.
- Carefully add the marinated chicken and any remaining marinade into the preheated skillet. Cook the chicken until it is fully done, turning it halfway through to ensure even cooking and a nice sear on both sides.
- Concurrently with the chicken, prepare the Spanish rice according to the package instructions. Once cooked, set the rice aside to cool slightly. This can also be done ahead of time to save on meal prep.
- Once the chicken is cooked, remove it from the skillet and place it on a cutting board. Allow it to cool for a few minutes until it’s comfortable enough to handle, then dice it into small, bite-sized pieces.
- Using the same skillet (no need to clean it – the residual flavors add depth!), sauté the chopped yellow onions and chopped tomato until they are softened and fragrant. This step infuses the skillet with an additional layer of flavor.
- In a separate large, clean mixing bowl, combine the cooked Spanish rice, the diced chicken, the sautéed onions and tomato (making sure to scrape any flavorful marinade residue from the skillet into the bowl), and the fresh minced cilantro. Mix all ingredients thoroughly until evenly distributed. Taste the mixture and adjust salt if necessary to your preference.
- Preheat your oven to 375°F (190°C). This temperature is ideal for baking the peppers to a tender consistency while melting the cheese.
- Prepare your bell peppers by cutting them in half lengthwise. Carefully remove all seeds and the white membrane from the inside of each pepper half, creating clean “cups” for the filling.
- Arrange the bell pepper halves snugly in the oven-safe skillet, positioning them like small cups ready for filling. Spoon the rice and chicken mixture generously into each pepper half, mounding it slightly if needed.
- Finally, sprinkle about 1-2 tablespoons of Mexican cheese mix over the top of each stuffed pepper. Place the skillet into the preheated oven and bake for 15-20 minutes, or until the bell peppers are cooked to your desired tenderness and the cheese is melted and bubbly. For firmer peppers, bake closer to 15 minutes; for softer peppers, extend the baking time.
Notes
- *For the Spanish rice, you can use a store-bought package for convenience, or if you prefer, utilize about 1.5 cups of leftover homemade Spanish rice. Using homemade rice can add an extra layer of authentic flavor.
- Storing Leftovers: These stuffed peppers make excellent leftovers! Once cooled completely, you can store them directly in the same baking dish if it has an airtight lid. Alternatively, transfer individual peppers to an airtight container. Refrigerate for 3-4 days to maintain freshness and flavor.
- Reheating Instructions: Reheating is simple. For individual portions, microwave in 30-45 second intervals until heated through. To reheat the entire pan, cover it loosely with foil and bake in the oven at 350°F (175°C) for 10-15 minutes, or until thoroughly warm. This method helps the peppers retain their texture and prevents the cheese from becoming too dry.
