Instructions
For Homemade Pesto:
- In a food processor, add about half the olive oil.
- Add basil, pine nuts, Parmesan cheese, garlic, and salt to the food processor and pour the remaining olive oil over the top.
- Pulse several times to begin blending. Scrape the sides of the food processor bowl and pulse a few more times. You may need to scrape the sides again and pulse until all ingredients are well blended and reach your desired consistency.
- Set aside until ready to mix into the pasta.
Shrimp and Pasta:
- Cook shrimp while pasta is cooking.
- Cook pasta according to package instructions in salted water. Before draining, reserve about 1 cup of the cooking water. (Some water will be used for the sauce, and the extra can be saved for reheating leftovers.)
- In a mixing bowl, toss the shrimp with salt, pepper, pressed garlic cloves, and grated Parmesan cheese until evenly coated.
- Preheat a large cooking pan over medium-high heat for a few minutes and add oil.
- Sear the seasoned shrimp for about 2 minutes on each side, until they turn completely opaque and curl into a loose “C” shape. (Exact time will depend on the size of the shrimp.) Immediately remove the shrimp from the pan as soon as they are cooked to prevent overcooking.
