Instructions

In a medium cooking pan, over medium heat, cook chicken breasts seasoned with some salt and pepper and diced bacon until cooked through and bacon is crisp.

While chicken and bacon are cooking, prepare elbow macaroni according to the package instructions until al dente. Drain well and transfer to a large mixing bowl.

Dice the cooked chicken and add it to the pasta. Add the cooked bacon bits as well.

Preheat oven to 350°F (175°C) and lightly grease a baking dish. A 2-quart baking dish or a 10-inch cast iron skillet works perfectly for this recipe.

In a small sauce pot, melt the unsalted butter over medium heat. Sprinkle in the all-purpose flour and whisk constantly for about 1-2 minutes to create a smooth roux.
