- 1/2 Tbsp. apple pie spice
- ½ tsp. baking soda
- Pinch of salt
Apple Pie Filling:
- 3 Tbsp. butter
- 2.5 lbs Gala apples, peeled, cored, and diced
- 1 cup brown sugar
- 2 tsp vanilla extract
- 1/2 Tbsp. apple pie spice
- 1/3 cup all-purpose flour
Streusel Topping:
- 1/2 cup brown sugar
- 1/4 cup white granulated sugar
- 1 tsp apple pie spice
- 3/4 cup all-purpose flour
- 4½ Tbsp unsalted butter, melted
Additional Topping:
- 6-7 oz Dulce de leche, divided in two
Instructions
- Apple Pie Filling:
- Apple pie filling can be prepared in advance, a couple of days or a few hours before assembly.
- Peel, core, and dice the apples.
- In a medium pot over medium heat, melt the butter. Add the diced apples and stir thoroughly.
- Sprinkle flour over the apples and stir well to coat.
- Add brown sugar, apple pie spice, and vanilla extract. Stir, then cover the pot with a lid.
- Cook, stirring occasionally, until the apples become soft and tender.
- Set aside and allow to cool until ready to use.
- Cookie Crust:
- Preheat your oven to 350 degrees Fahrenheit (175°C). Lightly grease a pie dish with butter or a non-stick baking spray.
- In a large bowl, cream together the softened butter and both sugars for a couple of minutes until the mixture is light and fluffy.
- Beat in the egg until fully incorporated.

- Spread the cooled apple pie filling evenly into the cookie crust. Gently press it down.
- Streusel Topping:
- In a medium bowl, combine brown sugar, white granulated sugar, apple pie spice, and flour. Mix well until all ingredients are evenly incorporated.
- Pour in the melted butter and carefully fold it in with a large fork. Be cautious not to over-mix; the streusel should resemble large crumbs, not a paste.
- Evenly spread the streusel topping over the apple pie filling.
- Bake for an additional 25-30 minutes, or until the streusel is golden brown and the filling is bubbly.
- Remove the pie from the oven and drizzle the remaining dulce de leche over the top while it’s still warm.
- Allow the pie to rest and cool for about 30 minutes before slicing and serving. This allows the filling to set beautifully.
