Ingredients

  • Crust:
  • cup all purpose flour
  • 3 Tbsp white granulated sugar
  • ¼ tsp salt
  • ¼ cup cold water
  • ½ cup cold butter
  • Filling:
  • 10 oz blueberries
  • Zest from 1/2 lemon
  • 1 tsp fresh lemon juice
  • 1 vanilla bean
  • 1/4 cup white granulated sugar
  • Vanilla sugar for topping – optional

Instructions

  • Prepare for Baking: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper, then lightly grease the parchment paper to prevent sticking.
  • Make the Crust: In the bowl of an electric mixer (or a large bowl if mixing by hand), combine the all-purpose flour, granulated sugar, and salt. Cut the very cold butter into small, ½-inch pieces and add them to the flour mixture.
  • Form the Dough: Mix on low speed (or use a pastry blender/your fingertips) until the mixture resembles coarse crumbs with pea-sized pieces of butter still visible. Gradually add the cold water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix. Transfer the dough onto a clean work surface and gently knead it a few times to form a cohesive ball. Flatten slightly into a disk, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes. This chilling step is essential for a flaky crust.
  • Prepare the Filling: While the dough chills, prepare the blueberry filling. In a medium mixing bowl, gently combine the fresh blueberries, granulated sugar, fresh lemon juice, lemon zest, and the scraped seeds from the vanilla bean. Mix well to ensure the blueberries are evenly coated. Set aside.
  • Roll Out the Dough: Divide the chilled dough into 4 equal pieces for mini galettes. On a very lightly floured surface, roll out each piece of dough into a circle, aiming for about ⅛ of an inch thick. You may also lightly flour your rolling pin to prevent sticking. Carefully transfer one rolled dough circle onto the prepared parchment paper on the baking sheet.
  • Fill the Galettes: Give the blueberry filling another quick stir. Spoon a quarter of the blueberry mixture into the center of each dough circle, leaving about a 1-inch border uncovered around the edges.
  • Shape the Galettes: Carefully fold the edges of the dough up and over the blueberry filling, pleating and overlapping the dough as you go around the circle. Gently press the folds together to seal them and ensure they hold their shape during baking.
  • Arrange for Baking: Repeat the filling and shaping process with the remaining three dough circles and blueberry filling. Place the mini galettes on the baking sheet, ensuring they are about two inches apart from each other.
  • Add Topping & Bake: Sprinkle some vanilla sugar (or brown sugar, or extra granulated sugar) evenly over the folded edges of all the galettes. This adds extra sweetness and a beautiful golden crust. Bake for 20-25 minutes, or until the crust is beautifully golden brown and the filling is bubbly.
  • Cool and Serve: Remove from the oven and let the galettes cool on the baking sheet for a few minutes before carefully transferring them to a wire rack to cool completely, or serve warm with your favorite toppings.
