Nutella Bliss Bites

Irresistible Nutella Cookies: The Ultimate Soft & Chewy Hazelnut Delight

Welcome to the most delightful time of the year – cookie baking season! There’s something truly magical about the aroma of freshly baked cookies wafting through your home. It instantly transforms any day into a special occasion, creating a cozy and inviting atmosphere that whispers “holiday.” For my family, this period is an absolute favorite, as our kitchen becomes a hub of sweet creations, filling the air with warmth and cheer. Imagine walking through your door after a long day to the twinkling lights of the season and the comforting scent of homemade cookies – it’s a feeling of pure bliss and holiday spirit, rolled into one.

And if you, like many, have a secret (or not-so-secret) love affair with a jar of Nutella and a spoon, then get ready for your new obsession. These Nutella Cookies are crafted to capture that beloved hazelnut cocoa spread in a delightful, bite-sized form. They are generously loaded with rich Nutella in the dough itself, ensuring every single bite is packed with that unmistakable flavor. To elevate the experience, each cookie is then lovingly coated with crunchy hazelnut pieces, adding a textural contrast that makes them truly extraordinary. These aren’t just any chocolate cookies; they are a celebration of Nutella, designed to bring joy to every Nutella enthusiast.

Why You’ll Fall in Love with These Nutella Cookies

What makes these particular Nutella cookies so special? It’s all about the perfect balance of textures and the intense, decadent flavor. They boast a wonderfully soft and chewy interior that melts in your mouth, perfectly contrasted by a slightly crisp, golden-brown exterior. This heavenly texture isn’t just a happy accident; it’s a carefully achieved result of slightly under-baking the cookies. Pulling them from the oven at just the right moment ensures that satisfying chewiness in the center, while the edges develop that delicate crunch we all adore.

Beyond the texture, the flavor profile is a dream come true for chocolate and hazelnut lovers. The Nutella spread is seamlessly integrated into the cookie dough, creating a deep, rich chocolate base with subtle notes of roasted hazelnuts. The addition of crushed hazelnuts on the outside amplifies this flavor, providing an extra burst of nutty goodness with every bite. These cookies are not just a treat; they’re an experience, designed to bring a smile to anyone lucky enough to try them. They are perfect for sharing with loved ones, bringing to a holiday potluck, or simply enjoying with a warm cup of coffee or milk on a chilly evening.

Customizing Your Nutella Cookies: Ingredient Variations & Tips

Can I Use Different Nuts for My Nutella Cookies?

Absolutely! While hazelnuts are the traditional pairing with Nutella, you have plenty of room to get creative with your choice of nuts. If hazelnuts are difficult to find, or if you simply prefer a different flavor profile, almonds make an excellent substitute. Their delicate crunch and subtly sweet flavor complement the rich Nutella beautifully. For an intriguing twist, consider using lightly salted almonds. The touch of salt creates a wonderful sweet and salty dynamic that elevates the cookie’s complexity and makes it even more addictive.

To prepare your almonds (or hazelnuts), simply place whole nuts into a sturdy zip-top bag and use a meat tenderizer or rolling pin to crush them into coarse pieces. You don’t want them pulverized into a powder; small, crunchy bits are key for that desirable texture on the cookie’s exterior. Other great alternatives could include pecans or walnuts, offering a slightly different nutty depth. Feel free to experiment with what you have on hand or what your taste buds desire!

Make-Ahead Magic: Preparing Your Cookie Dough in Advance

Life can be busy, but that shouldn’t stop you from enjoying homemade cookies! These Nutella Cookies are wonderfully conducive to make-ahead preparation, making them a fantastic option for busy bakers or anyone who loves to plan ahead. In fact, the dough actually benefits from chilling, allowing the flavors to meld and the butter to firm up, resulting in a more structured and flavorful cookie.

The recipe requires the cookie dough to be refrigerated for approximately 4 hours, but you can easily extend this chilling time. Feel free to prepare the dough the night before and refrigerate it overnight. Simply make sure to cover the cookie dough tightly with plastic wrap to prevent it from drying out or absorbing any unwanted odors from the refrigerator. This extended chill time not only deepens the flavors but also makes the dough easier to handle and scoop, ensuring beautifully shaped cookies. When you’re ready to bake, simply follow the remaining instructions from the chilled dough, and enjoy fresh-baked goodness with minimal effort on baking day.

Freezing for Freshness: Storing Your Nutella Cookies for Later

These Nutella Cookies are so delicious, you might want to make a big batch to enjoy over time! This recipe yields approximately 24-26 cookies, and if that’s more than you need for immediate enjoyment, freezing is an excellent option. You can freeze either half or all of the cookie dough, allowing you to have freshly baked cookies on demand whenever a craving strikes.

To freeze cookie dough balls:
Prepare the cookie dough according to the recipe instructions, but instead of refrigerating the entire batch, roll individual cookie dough balls using your preferred cookie scoop. Place these unbaked dough balls on a parchment paper-lined rimmed baking sheet, ensuring they are not touching. Freeze them for about 2 hours, or until they are solid. Once frozen, transfer the solid cookie dough balls into a freezer-safe bag or an airtight container. Remove as much air as possible from the bag before sealing it. Label the bag with the date and type of cookie, then freeze for up to 3 months.

To bake frozen cookies:
When you’re ready to enjoy a warm, fresh cookie, there’s no need to thaw the dough balls! Simply preheat your oven as directed in the recipe. Place the frozen cookie dough balls about 3 inches apart on a parchment paper-lined baking sheet. Bake them as directed, but remember to add an additional 2-4 minutes to the bake time since the cookies are starting from a frozen state. Keep an eye on them towards the end of the baking cycle, as oven temperatures can vary. You’ll know they’re ready when the edges are set and lightly golden, but the centers still look slightly soft.

Essential Tips for Baking the Best Nutella Cookies

  • Room Temperature Ingredients: Always ensure your butter and eggs are at room temperature. This allows them to cream together properly with the sugars, creating a smooth, emulsified dough that will result in a tender, evenly baked cookie.
  • Don’t Overmix: Once you add the flour mixture, mix on low speed only until just combined. Overmixing develops the gluten in the flour, leading to tough, dry cookies instead of soft and chewy ones.
  • Quality Matters: Use good quality Nutella and cocoa powder for the best flavor. The primary ingredients truly shine through in these cookies.
  • Chilling is Crucial: Don’t skip the refrigeration step. Chilling the dough solidifies the butter, preventing the cookies from spreading too much in the oven and helping them maintain their shape and that desirable soft-chewy texture. It also deepens the flavor.
  • Parchment Paper is Your Friend: Lining your baking sheets with parchment paper or silicone baking mats prevents sticking and ensures even baking and easy cleanup.
  • The Scoop Size Matters: Using a cookie scoop helps create uniform cookies that bake evenly. Adjust baking time based on the size of your scoop. Larger scoops will need a minute or two more, smaller scoops a minute or two less. For example, a #40 scoop usually bakes perfectly in 12-14 minutes.
  • Underbake Slightly: For that signature soft and chewy center, pull the cookies from the oven when the edges are set and slightly golden, but the centers still look a little soft. They will continue to set on the baking sheet as they cool.
  • Cooling Time: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This helps them firm up without breaking.

Serving Suggestions and Storage

These delightful Nutella Cookies are fantastic on their own, but they also pair wonderfully with a variety of beverages and desserts. Enjoy them with a cold glass of milk, a warm cup of coffee or tea, or even alongside a scoop of vanilla bean ice cream for an extra decadent treat. They also make a thoughtful homemade gift for friends and family during the holidays or any time of year.

To keep your baked Nutella Cookies fresh, store them in an airtight container at room temperature for up to 3-5 days. If you find yourself with an abundance of cookies, remember that they also freeze well after baking! Simply allow them to cool completely, then place them in a single layer in a freezer-safe bag or container. They can be frozen for up to 2 months and thawed at room temperature before serving.

Ingredients

  • 1/2 cup butter, room temperature
  • 1/2 cup brown sugar
  • 2/3 cup white granulated sugar
  • 2 eggs, room temperature
  • 1 cup Nutella spread, room temperature
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup finely chopped hazelnuts

Instructions

  1. Sift together flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.
  2. In a large bowl, beat the room temperature butter in an electric mixer on medium speed for about 2 minutes, until creamy.
  3. Gradually add the brown sugar and white granulated sugar to the butter, and beat for another 2-3 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Make sure to scrape down the sides and bottom of the bowl as needed to ensure all ingredients are incorporated.
  5. Beat in the Nutella spread and vanilla extract until well combined. Again, scrape down the sides and bottom of the bowl.
  6. Gradually add the sifted flour mixture to the wet ingredients. Mix on low speed until just combined, being careful not to overmix.
  7. Cover the cookie dough tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This chilling step is essential for texture and flavor.
  8. When you’re ready to bake, preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  9. Use a cookie scoop to form uniform cookie dough balls. (A #30, #40, or #50 cookie scoop can be used. Adjust baking time accordingly: a larger scoop will require a minute or so more, a smaller scoop a minute or so less. For a #40 scoop, bake for 12-14 minutes.)
  10. Quickly roll each cookie dough ball in the finely crushed hazelnuts to coat the exterior.
  11. Place the coated cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
  12. Bake for 12-14 minutes, or until the edges are lightly golden and set, but the centers still look slightly soft.
  13. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
