Ingredients

  • 1 Tbsp vegetable oil for cooking
  • 1 lb Hot Italian sausage (casing removed if not ground)
  • 4 jalapeño peppers, seeded and minced (adjust to preferred spice level)
  • 8 oz Pepper Jack cheese, grated
  • 14-16 medium raw flour tortillas

Instructions

  1. Pre-heat a medium cooking pan over medium heat and add the vegetable oil.
  2. If using sausage in casing, remove the skin and break the sausage meat apart in the pan. If using ground sausage, add it directly.
  3. Add the minced jalapeño peppers to the pan. Sauté with the oil until they are fragrant, about 2-3 minutes.
  4. Add the sausage to the pan with the jalapeños. Break it up as much as possible with a spoon or spatula. Cook until just done, stirring and breaking up any clumps frequently to ensure even cooking and browning.
  5. Once the sausage and jalapeños are cooked, remove them from heat. In a mixing bowl, combine the grated Pepper Jack cheese with the cooked sausage and jalapeño mixture.
