  • 32 oz whole baby bella mushrooms
  • 2 shallots, thinly sliced
  • 5 garlic cloves, minced
  • 2 Tbsp all-purpose flour
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1/3 cup vegetable or chicken broth
  • 1 Tbsp diced fresh sage
  • 1/4 tsp ground white pepper
  • Salt to taste

Instructions

  1. Gently wash the mushrooms and trim off the tough ends of their stems. Set them aside.
  2. Preheat a large, heavy-bottomed cooking pan or Dutch oven over medium heat. Add the canola oil and allow it to heat through.
  3. Add the thinly sliced shallots to the hot pan. Sauté for 2-3 minutes until they become fragrant and slightly softened.
  4. Stir in the whole mushrooms and minced garlic. Continue to sauté the mushrooms, garlic, and shallots for 7-10 minutes, stirring occasionally, until the mushrooms have released their liquid and are nicely browned.
  5. Sprinkle the flour evenly over the sautéed mushrooms and mix well, ensuring all mushrooms are lightly coated. Cook for another minute, stirring, to cook out the raw flour taste.
