Ingredients

Meatballs:

  • 1 lb ground turkey
  • 1 egg
  • 1/2 cup Italian bread crumbs
  • 1/4 cup fresh grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1/4 cup minced yellow onion
  • 1 Tbsp minced Italian parsley
  • salt and fresh ground black pepper, to taste

Soup:

  • Meatballs from above recipe
  • 2 Tbsp olive oil
  • 1 small yellow onion diced
  • 6 cups chicken or vegetable stock
  • 6 cup (loose not packed cups) chopped kale
  • 1 cup uncooked orzo
  • 2 garlic cloves, minced
  • salt, to taste
  • 1/2 tsp red pepper flakes optional
  • 1 egg, whisked
  • 2 tbsp fresh grated Parmesan cheese

Instructions

  • In a large mixing bowl, combine all ingredients for the meatballs (ground turkey, egg, Italian bread crumbs, 1/4 cup Parmesan cheese, 2 minced garlic cloves, minced yellow onion, minced Italian parsley, salt, and pepper). Mix thoroughly until all ingredients are evenly combined.
  • Preheat a large pot or Dutch oven over medium heat. Add olive oil. Form the meatball mixture into small, bite-sized meatballs and carefully add them to the pot. Cook the meatballs, turning occasionally, until they are about halfway done and lightly browned on all sides (they don’t need to be cooked through at this stage).
  • Add the diced onion and the remaining 2 minced garlic cloves to the pot with the meatballs. Sauté for a couple of minutes until the onion softens and becomes translucent, and the garlic is fragrant.
  • Slowly pour in the chicken or vegetable stock. Raise the heat to medium-high and bring the soup to a gentle boil. Once boiling, reduce the heat back to medium.
  • Season the soup with salt and red pepper flakes (if using) to taste. Adjust as needed.
  • Add the uncooked orzo and chopped kale to the soup. Continue to cook until the orzo is tender and cooked through, and the kale has wilted to your desired tenderness.
  • In a small bowl, whisk the remaining 1 egg and mix it with the 2 tablespoons of fresh grated Parmesan cheese.
  • Once the orzo is cooked, gently swirl the soup in one direction using a spoon or ladle. Slowly pour the whisked egg and Parmesan mixture into the swirling soup in a thin, steady stream. Continue to stir gently as you pour, allowing the egg to cook into delicate ribbons.
