  • 1 cup enchilada sauce
  • 1/2 tsp red pepper flakes
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 4 oz cream cheese, softened
  • 3/4 cup Mexican shredded cheese mix
  • 2 Tbsp enchilada sauce (extra for filling)
  • Topping:
  • 1 cup Mexican shredded cheese mix
  • 1 tomato, diced
  • 3 green onion shoots, diced
  • 2 Tbsp minced cilantro

Instructions

  1. Preheat a medium cooking pan over medium heat. Add vegetable oil, sliced onion, and diced tomatoes. Cook for a few minutes until softened, then add 1 cup of enchilada sauce, salt, and red pepper flakes. Mix well to combine.
