What Exactly is Chicken Souvlaki?
Chicken Souvlaki, pronounced “soo-VLAH-kee,” translates literally to “meat on a skewer.” It’s an iconic Greek dish, deeply rooted in the country’s culinary heritage, and widely recognized as a staple of quick, delicious street food. Far more than just grilled meat, Souvlaki embodies the essence of simple, fresh ingredients transformed into an explosion of flavor.
At its core, Chicken Souvlaki consists of tender chicken pieces, typically cut into uniform cubes, that are deeply marinated in a zesty, herbaceous Greek marinade. These marinated chicken chunks are then threaded onto skewers and grilled over an open flame, charring slightly on the outside while remaining incredibly juicy and flavorful within. The grilling process imparts a signature smoky aroma that elevates the entire dish.
While the grilled chicken skewers are a delight on their own, traditional Chicken Souvlaki is most famously served nestled inside warm, fluffy pita bread. This delightful package is then adorned with classic Mediterranean toppings: thinly sliced red onions for a sharp bite, fresh, juicy tomatoes for sweetness, and a generous dollop of cool, creamy tzatziki sauce. Tzatziki, a yogurt-cucumber-garlic dip, provides a refreshing contrast to the rich chicken and ties all the flavors together beautifully. This combination creates a harmonious balance of textures and tastes, making each bite an authentic Greek experience.
Chicken Souvlaki is more than just a meal; it’s a cultural icon, representing the freshness and simplicity of Greek cooking. It’s also incredibly versatile and can be enjoyed as a hearty meal, a light lunch, or even as part of a larger Greek mezze platter – an assortment of appetizers and small dishes meant for sharing.
The Secret to Succulence: Our Irresistible Greek Chicken Marinade
The magic of truly exceptional Chicken Souvlaki lies unequivocally in its marinade. This vibrant blend of ingredients is what transforms ordinary chicken into an extraordinary Greek culinary delight, infusing every bite with unparalleled flavor and tenderness. Our Greek chicken marinade is specifically crafted to deliver that authentic taste, ensuring your souvlaki stands out.
The marinade boasts a harmonious mix of bold and fresh components:
- Olive Oil or Canola Oil: The base of our marinade, oil helps to tenderize the chicken, carry the fat-soluble flavors, and ensure the chicken stays moist during grilling. It also promotes a beautiful char.
- White Wine Vinegar: This essential acidic component not only brightens the flavors but also works to break down the chicken’s fibers, resulting in incredibly tender meat. Its mild tang is key to the authentic Greek profile.
- Fresh Lemon Juice: A hallmark of Greek cuisine, fresh lemon juice adds a zesty, bright note that perfectly complements the rich herbs and garlic. It contributes significantly to both flavor and tenderization.
- Fresh Garlic: Generously smashed garlic cloves are fundamental, providing a pungent, aromatic foundation that is irreplaceable in Greek cooking.
- Fresh Dill Weed: Often underestimated, fresh dill introduces a unique, slightly sweet and grassy aroma that is characteristic of many Greek dishes. Its delicate flavor is a game-changer.
- Fresh Parsley: Bright and clean, fresh parsley adds a burst of herbaceous freshness, balancing the stronger flavors and providing a beautiful green hue.
- Dried Oregano: The quintessential Greek herb, dried oregano offers a robust, earthy, and slightly peppery flavor that defines the profile of souvlaki. It’s a must-have for authenticity.
- Coarse Salt & Black Pepper: These season the chicken from within, enhancing all the other flavors and bringing them into perfect balance.
This powerful combination penetrates the chicken as it marinates, creating a depth of flavor that can’t be achieved with simple seasoning alone. The acidity from the vinegar and lemon juice works wonders in tenderizing the chicken, ensuring that even after grilling, each piece remains juicy and succulent. The herbs and garlic infuse the meat with their aromatic compounds, setting the stage for that irresistible smoky flavor you get from the grill. It’s this careful balance of ingredients that makes our Greek chicken marinade truly special and guarantees a fantastic Chicken Souvlaki every time.

Lyuba’s Essential Tips for Making Flawless Chicken Souvlaki
Achieving perfectly grilled, juicy Chicken Souvlaki is simpler than you might think with a few expert insights. Here are Lyuba’s tried-and-true tips to elevate your souvlaki game:
- A Fantastic Make-Ahead Meal: Chicken Souvlaki is an ideal recipe for meal prepping. Since the chicken requires a minimum of 2 hours and up to 12 hours to properly marinate, you can easily prepare the chicken the day before or in the morning. This allows the flavors to deeply infuse the meat, making dinner preparation a breeze when it’s time to grill.
- Optimal Marination Technique: When marinating your chicken, always ensure the bag or container is lying flat in the refrigerator. This simple step helps the marinade to evenly coat all the chicken pieces, preventing any dry spots and ensuring consistent flavor penetration. Placing the bag or container on a plate or in a rimmed baking dish is also a smart move to catch any potential leaks, keeping your fridge clean.

- Choosing and Preparing Skewers:
- For durability and reusability, metal skewers are an excellent choice as they conduct heat evenly and don’t require pre-treatment.
- If you opt for wooden skewers, it’s crucial to soak them in water for at least 45 minutes prior to grilling. This prevents them from burning on the grill and helps them slide into the chicken more easily.
- Don’t Overpack the Skewers: When threading your chicken onto the skewers, resist the urge to pack the pieces too tightly together. Leaving a small space between each piece (about 1/4 inch) allows heat to circulate evenly around the chicken, ensuring every side cooks thoroughly and prevents steaming, which can lead to rubbery chicken. This method helps achieve that desired uniform browning and tenderness.
- Utilize Two Temperature Zones on the Grill: For optimal grilling, especially with chicken, creating two temperature zones on your grill is highly recommended. This means having one side of the grill set to medium-high direct heat for searing and getting those beautiful grill marks, and another side set to lower, indirect heat. This setup allows you to move the skewers to the cooler side if they are cooking too quickly on the outside before the inside is fully done, ensuring the chicken cooks through without burning. This technique is key to perfectly cooked, juicy chicken with a lovely exterior char.

Equipment
- Wood or metal skewers (soak wood skewers in water for 45 minutes prior to grilling)
Ingredients
For the Chicken:
- 2 lbs chicken breasts (about 4 breasts), cut into 1-inch cubes
For the Chicken Souvlaki Marinade:
- 1/2 cup canola or olive oil
- 3 tbsp white wine vinegar
- 2 lemons – juice only (use 3 if lemons are not very juicy)
- 6 garlic cloves, smashed
- 3 tbsp fresh minced dill weed**
- 3 tbsp fresh minced parsley**
- 2 tsp dried oregano
- 1 – 1.5 tsp coarse salt (more or less to taste)
- 1/2 tsp black pepper
To Serve:
- 6-8 Greek pita bread* warmed
- 2 tomatoes, sliced
- 1/2 red onion, sliced thin
- 1/2 cup tzatziki sauce (more or less to taste)
Instructions
Marinate the chicken (about 2 hours minimum):
- Combine all of the ingredients for the marinade in a bowl and whisk well. Taste to see if you have enough salt. (Make sure to taste before you add the chicken!)
- Cut the chicken into about 1-inch cubes and add into a large zip-top bag (or a glass food storage container for marinating). Add the marinade and mix well to make sure all the chicken is coated evenly.
- Let the chicken marinate for at least 2 hours or overnight. (Do not exceed 12 hours of marinating time for best results.)
To cook the chicken on the grill:
- For the best results and smoky flavor, cook the chicken kebabs on an outdoor grill.
- If using wooden skewers, make sure to soak them in water first for about 45 minutes to prevent burning.
- Prepare your grill and preheat it to medium-high heat. It’s always best to have two temperature zones on the grill, so you can move the chicken to a cooler side if needed to prevent over-browning.
- Skewer the marinated chicken pieces onto the prepared skewers, fitting 4-5 pieces onto each skewer. Do not pack them too tightly.
- Grill the chicken kebabs for about 4-5 minutes per side, turning them a quarter of the way as they cook. The total cooking time will be approximately 16-20 minutes, depending on the thickness of the chicken pieces and grill temperature.
- While the chicken is cooking, lightly brush pita bread with olive oil and place them onto the grill for a minute or two per side to warm through.
- Slice the vegetables (tomatoes, red onions) and place them onto a serving dish.
- To serve, remove the chicken from the skewers. Top each warm pita bread with some grilled chicken, sliced red onions, tomatoes, and a generous dollop of tzatziki sauce.
Cook the chicken in a pan (alternative method):
- You can easily cook the chicken souvlaki skewers in a preheated skillet on the stovetop if you don’t have a grill. Use a skillet that allows the skewers to fit well in a single layer. Add some oil to the skillet and preheat it over medium to medium-low heat.
- Place the chicken skewers in the pan in one even layer, ensuring they do not overlap.
- Cook the chicken over medium to medium-low heat, turning it a quarter of the way every 3-4 minutes, once one side is nicely golden-brown.
- Continue to cook just until the chicken is cooked through to an internal temperature of 165°F (74°C). You can use a meat thermometer to check the internal temperature or cut into the biggest piece to ensure it’s white throughout.
Notes
- *Gluten Free Notes: To make this chicken souvlaki gluten-free, serve it on your favorite gluten-free bread or gluten-free pita bread.
- **Using dried herbs: If fresh dill weed and parsley are unavailable, you can use dried herbs in the marinade. Simply use half the amount specified in the recipe for dried herbs, as they are more concentrated in flavor.
- Storing: Store any leftover grilled chicken in an airtight food storage container in the refrigerator for 3-4 days. It’s great for salads or quick wraps!

Frequently Asked Questions About Chicken Souvlaki
Q: Can I use different cuts of chicken for Souvlaki?
A: While chicken breasts are common for their lean nature and ease of cubing, you can absolutely use boneless, skinless chicken thighs. Chicken thighs tend to be more forgiving and retain moisture even better, resulting in an even juicier souvlaki. Adjust cooking times slightly as thighs might take a bit longer.
Q: What if I don’t have a grill? Can I still make Chicken Souvlaki?
A: Absolutely! As outlined in the recipe, you can cook Chicken Souvlaki in a preheated skillet or grill pan on the stovetop. Alternatively, you can bake the skewers in the oven at 400°F (200°C) for about 20-25 minutes, flipping halfway through, until cooked through. While you might miss some of the smoky flavor, the delicious marinade ensures great taste.
Q: How can I make my Tzatziki sauce extra thick?
A: To achieve a thicker tzatziki, ensure you thoroughly drain the grated cucumber. Place the grated cucumber in a fine-mesh sieve or a clean kitchen towel and squeeze out as much excess liquid as possible before mixing it with the yogurt. Using Greek yogurt, which is naturally thicker, also helps significantly.
Q: Can I prepare the marinade and chicken ahead of time for longer storage?
A: The chicken can be marinated for a minimum of 2 hours and a maximum of 12 hours. Marinating for too long, especially with acidic ingredients like lemon juice and vinegar, can start to “cook” the chicken and make it mushy. For longer storage without marinating, you can cut the chicken and prepare the marinade separately. Store the chicken raw and the marinade in an airtight container in the fridge for up to 2-3 days, then combine them when you’re ready to marinate for cooking.
Q: Is Chicken Souvlaki a healthy meal option?
A: Yes, Chicken Souvlaki is generally considered a very healthy meal. It features lean protein from the chicken breast, fresh vegetables, and a flavorful marinade based on olive oil and herbs. Serving it in a pita makes it a balanced meal, especially when paired with a Greek salad. To make it even healthier, opt for whole wheat pita or serve it deconstructed over a bed of greens or cauliflower rice.
