Ingredients

Rice:

  • 1 cup jasmine rice
  • 1 cup coconut milk (canned, full-fat)
  • 3/4 cup water
  • 1 lime (juice) juice only
  • 2 tsp sugar
  • salt (to taste)

Shrimp:

  • 1 lb shrimp peeled and deveined
  • 1 large lime juice AND zest
  • 2 tsp sugar
  • 1/3 cup coconut milk (canned, full-fat)
  • salt (to taste)
  • pinch cayenne pepper (optional, for heat)
  • fresh cilantro for topping (optional, for garnish)

Instructions

Rice:

  1. Combine water, lime juice, and canned coconut milk in a small pot over medium-high heat.
  2. Once the mixture starts to simmer, stir in the sugar and salt.
  3. Lower the heat to low, add the rice, stir, cover, and cook until the rice is done and all liquid is absorbed. Remember to stir rice occasionally and gently break up any clumps.
  4. Once rice is cooked, remove from heat immediately and let it rest, covered, for 5-10 minutes before fluffing and serving.

Shrimp:

  1. In a small mixing bowl, combine coconut milk, lime juice, lime zest, sugar, salt, and if using, cayenne pepper powder. Mix well and add the peeled and deveined shrimp. Stir well to coat and let it sit briefly while you preheat the pan.
  2. Preheat a cooking pan over medium-high heat.
  3. Add a little bit of canola oil to the pan. Take the shrimp out of the marinade (reserving the marinade) and sear on both sides until opaque and pink, about 1-2 minutes per side.
  4. Add the reserved coconut mixture that the shrimp marinated in to the pan. Let it simmer for a minute or two to slightly reduce and thicken. Take off heat.
  5. Divide the coconut rice among two bowls and top it off with the sautéed shrimp and delicious sauce.
