Ingredients

Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 5 Tbsp melted unsalted butter
  • Zest from 2 key limes

Cheesecake:

  • 16 oz cream cheese, softened
  • ½ cup white granulated sugar
  • 1/4 cup sour cream
  • 1 egg
  • 1/2 cup heavy whipping cream
  • 1/4 of 14 oz can sweetened condensed milk
  • 2 tsp vanilla extract
  • 2 Tbsp corn starch
  • Zest from 2 key limes

Key Lime Pie Layer:

  • 3/4 of 14 oz sweetened condensed milk
  • 4 egg yolks (save whites for meringue)
  • 1/3 cup fresh squeezed key lime juice (from 7-9 key limes)

Meringue:

  • 4 egg whites
  • 1 tsp cream of tartar
  • 1 tsp vanilla extract
  • 1 cup white granulated sugar

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Cheesecake Layer:

  3. In a small bowl, combine graham cracker crumbs, melted butter, vanilla extract, key lime zest, and brown sugar. Mix very well.
  4. Spread the crumb mixture evenly over the bottom of the springform, pressing it firmly onto the bottom and halfway up the sides.
  5. In the bowl of an electric mixer, beat cream cheese on medium-high speed until smooth and fluffy. Scrape the sides and bottom of the bowl and beat for another minute.
  6. Add corn starch and sugar, and mix until just combined.
  7. Beat in the egg until well incorporated.
  8. Add sour cream, vanilla extract, sweetened condensed milk, and heavy cream. Beat until all ingredients are very well mixed and smooth.
  9. Fold in the lime zest with a spatula until incorporated throughout the batter.
  10. Transfer the batter into the prepared springform and spread it evenly over the crust.
  11. Wash out the bowl from the electric mixer and dry it thoroughly.
  12. Key Lime Pie Layer:

  13. With a whisk attachment, beat egg yolks until light and fluffy, approximately 4-5 minutes.
  14. Slowly pour the fresh key lime juice into the egg yolks while continuously mixing.
  15. Gradually pour in the sweetened condensed milk, continuing to beat the egg yolk mixture. After all the milk is added, beat for a couple more minutes.
  16. Scrape the sides and bottom of the bowl and stir gently to ensure everything is combined.
  17. Pour the key lime mixture evenly over the cheesecake batter in the springform.
  18. Place the cheesecake in the oven and bake for 20 minutes. After about 15 minutes of baking, begin preparing the meringue.
  19. Meringue:

  20. Wash out the bowl of the electric mixer and whisk attachment again, ensuring they are completely dry.
  21. Pour the saved egg whites into the clean bowl, and add cream of tartar and vanilla extract.
  22. Beat egg whites until soft peaks form. Then, very slowly add the granulated sugar as you continue beating. Beat until stiff, glossy peaks are formed, which typically takes 1-2 more minutes.
  23. After the cheesecake has baked for 20 minutes, quickly and carefully remove it from the oven and spread the meringue over the top, making sure to seal the edges to prevent heat from escaping. Sealing the edges helps the meringue cook better.
  24. Return the cheesecake to the oven and bake for another 25 minutes. After this time, turn off the oven, open the oven door a little bit, and let the cheesecake sit inside for 10 minutes to cool down gradually.
  25. Remove the cheesecake from the oven and let it cool completely to room temperature on a wire rack.
  26. Once at room temperature, cover the cheesecake loosely with plastic wrap and refrigerate overnight for at least 8 hours. This chilling period is crucial for the cheesecake to fully set and for the flavors to meld beautifully.
  27. Before serving, very gently loosen the meringue from the rim of the springform. (The meringue is delicate and may crumble slightly, so work slowly and gently to minimize this.) Carefully run a greased butter knife between the sides of the cheesecake and the springform to separate it cleanly before removing the ring.
