  • 1/4 tsp. salt
  • 1 cup brown sugar, packed
  • 2 eggs
  • 2 1/2 Tbsp. coconut oil
  • 1 1/4 cup low fat buttermilk
  • 1 cup sweetened coconut flakes (fresh or store-bought)
  • Zest of 1 Key lime

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×4 inch bread pan.
  2. If using dry coconut flakes, soak them in a small amount of skim milk (or any milk of your choice) for approximately 5 minutes to rehydrate and soften them. Gently squeeze the soaked coconut flakes to remove any excess milk and set them aside.
