Ingredients

  • 1 1/2 cups whole milk
  • 1 Tbsp white granulated sugar
  • 1/4 oz packet of Rapid Rise yeast
  • 4 to 4 1/4 cups all purpose flour
  • 3 Tbsp salted butter melted
  • 1 egg
  • 1 tsp lemon extract
  • Zest of 1 lemon
  • 2 Tbsp honey
  • 1 tsp salt
  • Butter topping:
  • 2 Tbsp butter melted
  • 1 1/2 Tbsp honey
  • 1/4 tsp lemon extract

Instructions

  1. Combine sugar and yeast in a mixing bowl.
  2. Warm your milk to 120°F (49°C) and add the warm milk to the sugar and yeast mixture. Stir gently and let it bloom for 10 minutes until foamy.
  3. In the mixing bowl of an electric mixer, add 3 cups of flour and salt. Start mixing on low speed, then gradually pour in the bloomed milk and yeast mixture.
  4. Add the egg, melted butter, honey, lemon extract, and lemon zest to the mixing bowl. Continue mixing.
  5. Gradually add the remaining flour, 1/4 cup at a time, while the mixer is running. Mix until all the flour is just combined. The dough will be thick and should pull away from the sides of the bowl, but it will still be slightly sticky to the touch.
  6. Turn the dough out onto a lightly floured surface and knead it gently a few times to form a smooth ball.
  7. Shape the dough into a cohesive ball, then place it in a lightly greased bowl, cover with plastic wrap and a clean kitchen towel. Let it rise in a warm, draft-free place for 30-45 minutes, or until doubled in size. (A common trick is to place the bowl on a thick cutting board near a warm, but OFF, stove with the oven light on.)
  8. Once risen, gently punch down the dough and divide it into 12 equal pieces. (For smaller rolls, you can divide into 24 pieces, but you will need to adjust baking time accordingly.)
  9. Lightly flour your hands and roll each dough piece into a smooth ball.
  10. For a beautiful “flower” presentation, arrange 6 dough balls into each of two greased 9-inch round pans. Alternatively, you can place all 12 dough balls into a single greased 9×13 inch baking pan.
  11. Cover the pans with a towel and let the rolls rise for a second time for 30-60 minutes, or until they have doubled in size and are puffy.
  12. While the rolls are rising, preheat your oven to 375°F (190°C).
  13. Bake the dinner rolls for 18-20 minutes, or until their tops are golden brown. (Remember to reduce baking time if you opted for 24 smaller rolls.)
  14. While the rolls are still warm, prepare the butter topping. Melt butter in the microwave, then mix it thoroughly with honey and lemon extract. Generously brush this sweet buttery mixture over all the baked rolls. Serve warm and enjoy!
