Chipotle Creamy Chicken Thighs

Ingredients
- 2 tbsp canola oil
- 3.5 lbs chicken leg quarters (other cuts can be used)
- 2 red bell peppers thinly sliced
- 1 yellow onion thinly sliced
- Salt (to taste, for seasoning chicken)
- 1 pint heavy whipping cream
- 4 chipotle peppers in adobo sauce (minced)
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp sugar
- Salt (to taste, for the sauce)
Instructions

Preheat your oven to 350°F (175°C).

In a medium mixing bowl, combine the heavy whipping cream, paprika, garlic powder, and a pinch of salt.

Finely mince the chipotle peppers in adobo sauce (remove seeds for less heat if desired) and whisk them into the heavy cream mixture. Continue to mix the sauce until all ingredients are evenly incorporated and smooth. Set this creamy chipotle sauce aside.

Place an oven-safe cooking pan (a cast-iron skillet works wonderfully) over medium-high heat on your stovetop.

Lightly season the chicken leg quarters generously with salt on both sides.

Carefully transfer the entire pan into the pre-heated oven. Bake for approximately 40-45 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Baking time will vary based on the size and cut of chicken used; drumsticks and boneless thighs may cook 10-15 minutes faster than bone-in leg quarters.
