Ingredients
- 8 oz baby bella mushrooms
- 1 large leek
- 1 Tbsp vegetable oil for cooking
- Salt, to taste
- Fresh cracked pepper, to taste
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 5-6 oz Gruyere cheese, block or wedge, grated
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish. If using a cast iron baking dish, ensure it’s well-seasoned or lightly rub it with some oil.
- Preheat a medium sauté pan over medium-high heat. Add vegetable oil.
- Prepare the leek: Cut off the dark green leaves and the very bottom root end. Discard these parts or save them for homemade vegetable stock. Wash the leeks thoroughly to remove any dirt, then cut them lengthwise in half. Slice each leek half lengthwise into thin strips, and then cut across the width to create a small dice.
- Wash and slice mushrooms as thin as possible. Set aside.
- Add diced leek to the pre-heated sauté pan and cook for a couple of minutes until slightly softened. Add the sliced mushrooms. Season with a pinch of salt and pepper and mix well. Continue to sauté until the leeks and mushrooms are nicely browned and tender.
- Meanwhile, in a mixing bowl, combine the softened cream cheese and sour cream. Beat with a mixer until smooth and creamy.
- Grate the Gruyere cheese. Add approximately 3/4 of the grated Gruyere to the cream cheese mixture. Mix thoroughly until well combined.
- Carefully fold the cooked mushroom and leek mixture into the cheese mixture. (You can reserve a small amount of the mushroom and leek mixture for topping the dip later, if desired.) Mix everything together until evenly distributed. Taste and adjust seasoning with a little more salt and pepper if needed.
- Transfer the dip mixture into your prepared baking dish and spread it evenly across the bottom.
- Sprinkle the remaining grated Gruyere cheese over the top of the dip.
- Bake for 15-17 minutes, or until the dip is hot, bubbly, and the cheese on top is melted and slightly golden. (If you reserved some mushroom and leek mixture, you can add it to the top during the last few minutes of baking for garnish.)
- Serve warm with your favorite dippers and enjoy this incredibly delicious, comforting appetizer!
